My Fast Pass day is tomorrow morning and I am having last minute doubts about my plan. This is my family's first trip to WDW. We are doing 3 days in MK.

My FP choices over the three days are

Seven Dwarfs
Peter Pan
Big Thunder
Pirates
Jungle Cruise
Splash Mountain
Space Mountain
Haunted Mansion
Buzz

Where I am having doubts is I really want to do talking Mickey at Town Square and I have been reading that he has 60 minute + waits for most of the day. I know my alternative is to do rope drop, but on Day 2 we have a character breakfast that makes that difficult and on Day 3 I was wanting to preserve rope drop to ride all of the things again we liked on Day 1 and Day 2 a second time. I'm also a little unsure about my family's ability to get up and with it in the mornings.

My question is should I FP Mickey instead of one of my choices? I was thinking about skipping FP for Jungle Cruise, but is there another choice that shouldn't have atrocious lines? Will I be likely to get Mickey as a 4th FP, say if we wanted to do it after dinner one night?

FP mickey instead of Buzz then get Buzz as a 4th FP that day. Next in line would be Haunted Mansion. You really shouldn't have trouble getting either of those as a 4th or more FP during your day there.

The mickey wait can get long and it's less likely to have FP's still available versus Buzz and HM

If you choose to FP Mickey, try for a morning timeslot scheduled for as soon as you complete your rope drop attractions. This past weekend, by mid-day all Mickeys were regular, non-talking Mickeys.

The Magic Words meet and greet is winding down and scheduled to stop using Talking Mickey by early May. So, even with the backstage technicians, Mickey isn’t always talking throughout the day.
 

I would have a FP for 7D on all three days. Most people will want to ride it more than once and the line can be bad. As noted by others removing Buzz, HM or Pirates makes sense.
 
While the above comments will solve your issue, I will add that I would not RD a M&G if at all possible. In my experience M&Gs are more likely to have opening delays than rides. This was back when the welcome show at MK was still at the train station and we were in the park about 8 minutes prior to official opening, but the characters sometimes did not start meeting until about 5 minutes after official park opening. Usually the rides will be operating as soon as the RD crowds are released... character M&Gs are less certain.

Is there any way to know this in advance? I would hate to burn a FP and show up and it is not even talking Mickey. What you are suggesting actually fits in my touring plan better. I wanted a FP from 9-10 so we can leave our nearby character breakfast and go straight to Mickey without burning a lot of our time/day. That could increase our chances of a fourth FP that day as well. Touring plans has me at a 15 minute wait around 9:30-10 for Mickey, but I am reading on here that is probably not accurate. By 10 it seems already at an hour and factor in it is an attraction that is being retired soon...
 
Just as an aside, Jungle Cruise is a slower loader so usually has a long wait. Pirates seems to move quicker so if you're choosing between losing one or the other, I would say Pirates. But I agree that Buzz and Haunted Mansion are your first and second best choices.

When you arrive at Town Square Theater, you can ask a CM if Mickey has his “voice” and hopefully the CM may know or can warn you. Even with that, Talking Mickey can stop speaking at any moment.
