We will be arriving on August 16 and staying until the 22nd; we will used our length of stay passes the day we arrive but are leaving too early on the 22nd to use them - should I call Disney to ask about crediting us for the unused day? Would they do that?

I'm afraid they will not allow you to drop a day from your UPH on a package like FTP. Days can only be dropped when the UPH is purchased at resort check in. Anything included in a package can't be changed.
Since you are on the FTP, your last day's passes (and more if your reservation is longer than five days) are free anyway so it's not costing you anything additional anyway.
