Did they really get rid of those cool hot tubs for adults right up against the edge of the ship?

No. Not unless they did it during Covid shutdown, but I haven't heard anything about changes to the Fantasy occurring during shutdown. We sailed the Fantasy over 2020 New Years (just a few months before shutdown) and I used those adult hot tubs regularly.

I was reading someone's trip report and they said something about it being removed and replaced with a splash zone.

The family hot tubs on the Fantasy's family pool deck were removed and replaced with a kids' wading pool a few years ago. The adult hot tubs are still there.
