Fantasy Eastern Car- Which night to eat at Palo & brunch at Remy?

Hi all. Can someone suggest which night would be best to book Palo for dinner and which day for brunch at Remy? I've never done either, and am excited, but don't want to miss the best shows or things like Pirate night. Someone suggested booking towards the later part of the cruise so we don't miss Animator's room, etc.... But wondering if anyone has an updated schedule of when Pirate night is (I've heard 4th night) and which shows are currently on which nights?
We are going Jan. 30.
Here's the itinerary:
Day 1- port canaveral
Day 2 - at sea
Day 3- at sea
Day 4- tortola
Day 5- St. Thomas
Day 6- at sea
Day 7- Castaway Cay

One little bit of input, most recommendations (if you're only doing one meal in each of the adult-only restaurants) is to do Palo brunch, and Remy dinner.
 
On our last cruise we had our Palo dinner the first night. Hadn't done that before. We stopped by the MDR to let our servers know we wouldn't be there so they didn't have to worry about our showing up, then had a fantastic dinner at Palo. In fact, it wasn't very full, and was really relaxed. A nice start to the cruise, and we didn't have to worry about missing any of the special nights in the dining rooms.

Remy brunch - what a fantastic experience. You'll really love that, and since it isn't in the evening I really don't think it matters too much which day you pick.

All we missed by having Palo the first night was the welcome aboard show in the theater. Since it seems half of that show is the Captain and Cruise Director talking about what a great time we're going to have instead of an actual show (well….maybe not really half that show time LOL), and the theater shows after the first night always seemed better to us, so I think we may be having our Palo dinner on the first night again next time.

Agree with 50 visits, except our tradition (15 cruises) is to always try to dine at Palo or Remy on the first night. The restaurants are not crowded & for us it the perfect way to start our cruise. On a 7 day we try to hit both Remy & Palo brunches on any sea day. On a 4 day, we do the Remy brunch on the open sea day.
We also let our MDR servers know whenever we will not be dining in any of the main dining rooms.
 

We have noticed on sea days, there can be some vibration in those two restaurants that can be distracting. I think it may be due to the fact that the ship is moving at a higher rate of speed. When we go on the night before St. Thomas, there is no vibration. It's a short trip from St. Maarten or Tortola to St. Thomas, and the ship is moving more slowly. Not sure if that's the reason why, but it works for us.

The night you really don't want to miss in Animator's Palate is the Animation Magic show night. That is the show done later in the cruise. The first night you are in Animator's you will have the Crush show. So I wouldn't say that booking later in the cruise will be helpful in not missing Animator's.

The best thing to do is to request a specific rotation and then book your Palo dinner reservation around that. The rotation requests are not guaranteed, but DCL tries their best to grant them.

If I had to guess, I'd say Pirate's night would be night 4 on your cruise, but that's not a guarantee. Some Eastern Caribbean cruises have had it on other nights. If Pirate Night is on night 4, the rotations will be the ones PrincessShmoo listed above. I'd use that as a guide to pick a rotation to request and a night to dine in Palo. If your rotation you receive doesn't work with when you've booked your Palo dinner, then either try to change the Palo reservation when you board, or try to change your rotation. Where and when to do those things will be listed in the Navigator you get at check in.

On my last cruise, I dined in Palo on the last night. The restaurant was very empty and I asked my server about what were the busiest and least busy nights. She said the first and last nights are the least busy.
