Many years ago, I recall a 2nd Fantasmic showing when visiting in July. Do they still do a 2nd show on certain days?

Not as many as they used to. I think the length of days in June and July does not lend itself well to projections on water.
Fantasmic adds the second show when crowds are expected to be high. Summer has become a slower time coupled with Disney has seemingly gotten better about predicting their expected crowds and staffing accordingly, so fewer days get graced with additional showings. Early June is a busier time than mid-late June.

I always thought summer was the second worst time to visit, other than Christmas. May be summer is dying out due to the heat?
 
Catching the second show of Fantasmic is so much better than the first show if the opportunity presents itself. What a pleasure not fighting the hordes of people for seats...not even good seats...just seats in general! And getting out a breeze as well.

It used to be much busier in the "Summer" but as Guests started to have more flexible Vacation times vs the old every school kid or teacher being out for the June - Labor Day week-end period. The big times are Christmas - New Years, Easter, and then Spring Breaks (multiple blocks of dates in March, and early April).

In addition as @gottalovepluto indicated blocks of Fall also have much larger crowds. October bank holidays, fall school breaks, and early November for Jersey week / Veterans Day Holiday especially when they overlay.

All this periods don't mean that every week during the summer will be a ghost town, just periods of lower Guest visits between spikes of very busy dates.
