Which on site hotel would be good for a family of 5 sharing one room?
 
My favourite is the deluxe room at the Hard Rock. It has two queen beds and a queen pullout couch. However, all standard rooms at all three hotels will fit a family of 5. You'll just need to either bring along an air mattress or rent a cot.
 
We did deluxe at Portofino last summer. DS16, DS14, DD12. The littlest one got the pullout sofa.

We chose that hotel because of the larger square footage. The difference is mostly in the larger bathroom, though and it was very nice. :thumbsup2

We are also a family of five. I just booked at the Hard Rock a standard room with two queen beds. For the fifth person we are requesting a roll away. It will cost us 25 dollars a night more.

We have stayed at the same level room at the Royal Pacific. I remember it being tight fitting for this many people (and the 3rd child was 18 months then; she is now 4) but since this current trip is tied to a Disney cruise, I can't reason spending more than I am.
 

Just returned from our 5 nights at RPR, the room was fine for the five of us. We did not request the roll away bed as my son does not have an issue with sleeping on a small camping air mattress. Did see one of the beds (full mattress) in the hall and it stands vertical when not in use and would be out of the way in the alcove near the room door.
We did have club level and used it extensively as a living space to stretch out, so that may have helped with the room size.
 
Portofino and Hard Rock both have room categories called Deluxe Queen rooms. These rooms have two queen beds plus a fold out sofa bed. Technically, they sleep 6 people.

The standard Hard Rock two queen bed room is 375 square feet. The deluxe is 500 sq ft.

At Portofino, the standard room is 450 sq ft and the deluxe is 490 sq ft.

The Royal Pacific standard rooms are only 335 sq feet and they have nothing bigger. They'll let you put 5 people in this room, but note that it has the least square footage of all the hotels.

I guess it depends on your children's ages, where they'd be comfortable sleeping, and how much you want to spend.
