Family meal time cornbread question OT

This is a fun thread. Although everyone has pretty much the same answer. It's neat to hear all the differnet eating habits.

We always had cornbread for thanksgiving too with Turkey..Don't have that in Canada.
 
We serve it with kielbasa or ring bologna. That and a can of peaches makes a really cheap (albeit not terribly healthy) meal. Its a rare treat.
 

Fried cornbread is best made in a Lodge skillet (a big black iron w/ deep sides skillet- seasoned of course)
you mix up your cornmeal as usual but instead of baking you fry- (you can decrease liquid a bit if your mix is too runny (again depends how you make it, mine is a bit thicker than pancake batter)
use oil in your skillet about 1/2 cup (depending on size of skillet- basically so that oil is about 1/8 to 1/4 deep in skillet.. and HOT)
once oil is heated enough- drop your cornmeal mix like you were making pancakes but not as big (it is thicker so is usually easy to do with a nice heaping scoop and that is large enough) They fry the same as pancakes- once first side starts to bubble a bit, flip it over and when done drain on papertowel or just let drip... (I use papertowel because I can't take too much grease) they are sooooo good and especially great w/ chili, beans, cabbage, greens, ... well, all the items above I had already listed- LOL
Try it out, you won't regret it! Oh! I do add a bit of salt to mine like this- just a quick shake once out of grease- but whatever taste you prefer...
 
Cornbread is delicious with vegetables from the garden - fried okra and creamed corn, squash and green beans, cabbage. Yum, now I'm hungry.
 
Do be aware that there are huge regional arguments about the flavor of cornbread and any additives put into it. In some areas it is salty and may be flavored with bacon or jalapeno peppers. In other areas, it is somewhat sweetened and may include whole corn or even chopped green onion tops (my personal preference).

Brown just a little lean ground beef or sausage with some onion, add a small can of cream style corn, a handful of grated cheese, and a chopped fresh jalapeno or two to your cornbread mix and bake in a big iron skillet that's been greased really well. Serve with a big bowl of pinto beans or any TexMex meal.
 
Mix some whole corn and onion that's been chopped fine into your cornbread batter, drop by tablespoon fulls into a deep fryer, fry until brown and use as hushpuppys to go with fried catfish, coleslaw, and pinto beans, along with some green tomato relish.
 
Oh man, I am hungry after reading all those posts.

We usually have baked or fried cornbread with Sunday Dinner....(mom makes the best fried cornbread, grandma does the best baked, it get so crunchy around the edges) Sunday dinner usually compose of roast, collards/cabbage, sweet potatoes, potato salad, chicken salad, and so on and so forth.
 
I like to smother my cabbage with fresh made jalapeno chicken sausage. Ca c'est bon.

I live in the south and cornbread is pretty much an every night thing with dinner. I love it but I'm kind of picky about it. It has to be cooked in a cast iron skillet in the oven or fried into hoe cakes. We eat it with anything instead of making rolls or having bread.
 
I agree here in the south we eat it with almost anything. I love it with butter on top yum yum. which resurant did you have it at?
 
I love mine warm mashed up in a bowl, with load of butter and honey all mixed togther...and I eat it just like, cereal w/ a spoon. :thumbsup2
 
Man, ya'll are making me hungry. The South Louisiana girl in me will just add my dittos to those who say it goes with everything. Seriously, it'd be easier to ask what it doesn't go with.
 
Hey there, this fellow Canuck loves cornbread. One of our favorite dinners is cornbread with a southwest salad. We buy the Dole salad kit that has the dressing, cheese and tortilla pieces included and I add my own turkey bacon to it. I'm not sure where in Canada you are but I can get the salad kits at our local Metro or Superstore. Mmmmmm, I think I will make it for dinner tomorrow.

Mais yeh Cher. We live in Youngsville. My wife is from Abbeville. Their family IS CAJUN POWER. I get my fresh jalapeno chicken sausage from NuNu's. We brown it real good before we add the cabbage.

I make cornbread from a dry mix about 3 mornings a week for my DS who loves it plain, me....slathered with butter! Mmmmmmmmmmmmmm!
 
We also have cornbread and chili at our house. We eat it with butter too. Growing up we also ate it with ham and bean soup.

One way we eat it that I did not see mentioned is with sloppy joe leftovers. I like to put the meat on top of the corn bread and add lettuce, tomato, shredded cheese, and sour cream. Yummy! We call it sloppy joe special.

I really like the corn bread at Flame Tree BBQ. Now I'm craving it!
