F&W Festival Preview Day question

A question for anyone who has been to Epcot the day before the Food & Wine Festival officially starts.

Is there typically a preview day? I've heard that the Thursday before the festival that the booths sometimes open as a dry run. My main question is this:

Do they open at 11 with the rest of World Showcase? Or is the preview a night time thing? Or is it just the luck of the draw?

I want to say all the booths were open by Wednesday or Thursday before. Not earlier then Monday, but by Thursday for sure. So I don't remember exact dates. I've been a couple of times at the beginning of F&W.

They open the day before the official start date for cast members, but apparently they don't make you prove you are a cast member before you order anything, so anyone can use them.
