Ok, I don't like cucumbers, nobody in my family liked cucumbers when I was growing up either. My DS has had them at school and daycare and loves them, so he asked for some at the store today and I bought some, but I don't know what to do with them:o Do I have to peel them before slicing them?? And they are pretty big, so how can I save them after slicing them? I'm sure he'll only eat a few slices at a time and I don't want to throw the other half away, so what do I do with them? I'm embarassed to ask this, but I know someone will help me :D

TIA

No, you don't have to peel them. You do want to scrub them really well, though, if you don't -- cucumbers are almost always covered in wax.

I've always just wrapped up the cucumber in plastic and then popped that in a bag, and it's fine in the crisper drawer for a few days.

I usually chop of the amt. I need, then wrap the cut end in a damp papertowel and stick that end in a baggie. Keeps it from drying out and getting 'icky". I don't particularly like the skin, so I usually peel the part I'm using...

DH likes them as a snack. He doesn't like the peel either, so I peel them, slice them up and put them in a bowl of water in the fridge.

love cucumbers! have to agree with everyone. I always peel store cucumbers just because of the coating that is one them.
I also will slice them add a little salt, cider vinegar and onions and let it sit for awhile! YUM!
But how excellent is that! your son loves a green veggie! SO does my son but not DD! I usually cut a whole one up just for him!

here's a fun idea for sliced cukes - after scrubbing - leave the skin on & use a fork to run down the long sides (so it is all striped)
When you slice them into rounds, they are decorated very fun
easy & fast pretty in a tossed salad

If there's still too much skin for your taste after scroing with a fork, another idea is to create wider stipes by peeling only sections of the cuke. Same idea - less skin, still pretty.

I try to buy smaller cukes - fewer seeds in the middle (yes, they're edible - but I'd rather eat the fleshy part) and the skin is a bit softer so there's less need to peel. Our store sells by the pound, not the each, so they cost the "same."

Hi. I usually peel them because I can hardly ever get the wax off the skins... but if you can they taste fine that way. I think cucumbers are only like 50ct. each, they are usually charged by the cucumber not the weight, so they aren't all that expensive, if he doesn't get to eat the rest of it you won't be wasting too much money.. if you put them in a little apple cider vinegar and salt and pepper and let them marinade they are VERY good. =)

good luck!
