What are some fun extra's to do at Disney World that don't involve the rides/character meet and greets?

Some tours that Disney offers? Even taking suggestions for things to do outside of the parks (but not too far because I'd have to Uber). I've already done Discovery Cove. I really wanted to do Club Villian but it doesn't look like they'll have it when I'm here (March 25-31).

Ideas?

Behind the seeds in Epcot.

Spend an evening at the Boardwalk Area. They have live entertainment, surrey bike rentals, ring toss, great bars and restaurants at all the surrounding resorts. Plus it's just a beautiful area to walk around.

We stayed at Contemporary back in 2010 and took advantage of the activities at the marina. Parasailing was AMAZING with views of MK and surrounding area. We also rented those little boats - I think they're called sea raycers? you're free to drive them all around 7 seas lagoon and bay lake. We got to boat past the front of MK, past all the beautiful resorts, fort wilderness, AND we got up close to the abandoned River Country area and the abandoned Discovery Island. I don't know why more people don't suggest this - it was SO COOL!!

Shopping at Disney Springs, mini golf, City Walk at Universal, Hoop dee doo Revue, resort hopping, Orlando Outlets (the Disney Store had great deals when I was there on Vera Bradley bags)

After 35 Disney trips doing lots of extras, the best thing by a mile is Wild Africa Trek. Its expensive, but worth every cent. I will be doing again on my January trip.
