Are offsite guests required to exit when EMH starts at night, or are you able to shop or grab a snack/drink? I understand the rides are off limits.

No, you’re not required to exit. Access to rides is controlled at ride entrances, but otherwise you are free to meander out at your leisure, shop, etc.
