According to the Disney World web-site calender each day one of the Disney Theme Parks opens an hour early or stays open up to three hours after regular Park closing. Are the hours posted anywhere that gives the exact number of evening hours for the parks?

Also if the evening extra hours go past midnight can we enter after midnight on arrival day so that the ticket reflects entry for the date after midnight? We have a 7 day park hopper w/water for a 8-day/7-night stay at ASMo.
If we use it on arrival day departure day would be day-8.

The parks are open 3 hours after closing for Extra magic hour evenings. I'm not sure about the midninght thing, but I think that if you use the ticket after midnight that still counts as a day. You should ask the concierge when you check into your hotel, but if you have a 7 day ticket, you can add on an extra day for something like $2 per ticket.

Evening EMH is always 3 hours.

The time you enter the park doesn't matter. When they say "day" it means open to close, not calender day. So even if you went at midnight, which you can, you would leave when the park closes and need to use another day's admission the next day.

An extra day will cost you about $2. I'd go ahead and buy it, but you can always add it while you're there.

Yes, the exact hours are posted on the Disney World site calender you mentioned. Just click on "Extra Magic Hours" and you will find the info you need.

You can click on the link below. On the left hand side of the page, click on the link that says Extra Magic Hours and you will find a page with EMH dates month by month. You can also see what attractions are open am and pm EMH.

I think your ticket would still register for the day before, because I know if you park hop, and enter a new park after midnight, it does not count for the next day. As the poster above said, you can upgrade your 7 day ticket to 8 days for $2 more. (The link will take you to a price chart.)
