We went on the "Dig" tour at Atlantis. This is the tour of the aquariums. When my DD was 18 months, she would have loved this. We also walked through the casino at Atlantis. My advice - do the excursion on your own in the morning - and get back to the ship for lunch (heh - I'm cheap :wave2: plus our DD wanted to do something on the ship at 1:30). Assuming that your little one will want a nap, the Disney sponsored excursions probably won't work from a timing perspective.

Just a note of caution - I don't believe that any of the taxi's offer car seats for kids, so if that will be an issue with you, maybe you would rather enjoy the ship while everyone else is off on Nassau. There was a thread on this about a week ago, on the cruise boards.
