Don't know for sure, but I would think you would be entitled to DVC membership perks as long as you are a member in good standing; regardless of where you are staying, or how you secured the lodging.
The valet perk is tied only to your membership - you do not even have to be staying on site to get that. As long as you have your membership card with you, you'll get the free valet parking at BWV, BCV & VWL (The perk is only valid for the DVC resorts that offer it).
AFAIK, all you need for the DVC dining discounts is your membership card, too. If not, you would also need to show your resort ID that shows "DVC Member" on it. I do not know what the KTTW cards show for exchangers. If it does show "DVC Member" (I think all the points paid ressies do, but am not sure), then you will be able to get all the perks, since you are also a member.
You can get all perks except the member room discount, golf discounts and previously the UPH option discount. But you are definitely entitled to the restaurants and other park discounts including the AP and PAP discount as well as valet parking.

You could get it for a stay not part of an exchange but the DVC member must be in the unit with the discount. So if you wanted to add a day and the discount were available, you should be fine. I expected in your specific question that member discount didn't directly apply but decided to include it for completeness. Doc added the one thing I left out.
