Evening touring plans??

Hello,

Wondering if any seasoned Disney planners could offer some insight..

I am beginning to plan a Disney vacation for next April for my husband's 50th birthday that will include him, myself, and our three children who will be 10, 8, and 4. This will be the third trip for our 10 and 8 year olds and the second trip for our youngest. During those prior trips we have tried to be early risers (not our favorite thing) and get to parks for rope drop or shortly after. We have usually stayed until mid day then returned to the pool. Then we have returned to the parks in the evening or planned a fun character dinner.

I'm wondering if anyone has experience with planning mostly evening park touring. For this trip I'm toying with the idea of spending our mornings at the pool/resort and enjoying some resort breakfast reservations then heading to the parks for the afternoon/evening. I'm just not sure if it will be a flop without fast pass. My kids are night owls but need to sleep in in the morning if they're up too late at night.

Rides we MUST hit -
MK: Seven Dwarfs, Small World, all three Mountains, Haunted Mansion
Epcot: no must hit rides but several restaurants we want to visit
HS: Slinky Dog Dash, Mickey & Minnie's Runaway Railway (Rise of Resistance and Smuggler's Run if possible but not deal breakers)
AK: Everest

Edited to add- staying 6 nights but thinking of adding a 7th
