Great ideas! I too prefer to have my days off from the parks in the middle of the trip, but the points was to take some time to enjoy the resorts and that is a great idea!
The way we have it scheduled is that we are not doing a park on the day of arrival, then we do 2 park days, one off, two more park days, one off, and 1 more park day. The next day we leave and are doing nothing but having breakfast at the resort and checking out. This (for us) is perfect as it balances park days with some time off to rest our sore little footies! We are taking the Keys tour on our last day, and horseback riding on one of the days off. We are also doing the Richard Petty Driving, the Hoop De Doo, and spending plenty of time at DTD/PI.
We did decide against the Dream Maker packages. We don't need a UPH, and the add-ons, even the Silver, wouldn't be worth it. Any savings on meals/tours would be wiped out by the extra we are spending for UPH's that we won't be using everyday. The Silver/Gold packages can be worth while, but crunch the numbers. By not doing the package, we estimate we are saving $400. That's even more money to do what the OP suggests, and just do what we want and not worry about $$$. The OP's intent was good, but always compare prices to make sure the packages will give you the best value.
The most important thing to do is stop and smell the roses. We've all worked to hard and long to ignore the wonder that is WDW in order to stay "on schedule" just to get your "moneys worth".
