What ethnic cuisine would you love to cook that you cant now?

You just described my utmost favorite meal. Yum!! Don't forget the gravy for on the dumplings. and as I said the liver dumpling soup. I just have to figure out how to make liver dumplings.

Authentic Korean-- other than bulgogi ( I have gotten pretty good at that)

I'm working on Thai, but I'd love to cook Indian. It just costs far too much to get all those different spices, though.
