Southern California Escondido as our base, what should we do?

So, we're headed to the Welk Resort in Escondido for a week in mid-December. What should we do? Our DL APs will be expired by then, but we do have a set of comped 1-day passes; so we're planning a 1-day jaunt up to Disneyland. We also were previously AP holders at Sea World and will probably want to head there as well. What else should we do? There are a couple of things that we have done in the past that my parents refuse to do again: Legoland and the San Diego Zoo.

What about a tour of wineries in Temecula? Trip to Julian for some apple pie, although in December it will be cold. The wild animal park is out that way, I always liked it more than the zoo.

I love Julian and definitely stop for an apple pie.

What about Anza-Borrego?
