Epcot vs Hollywood Studios

DHS (and I LOVE Epcot). For your first trip, you will find plenty to do at DHS to occupy you for an entire day and it is not as challenging to manage as Epcot. You can only get FP+ for either Soarin or Test Track and both have crazy standby lines.

At DHS, you can get FP+ for Toy Story and still manage RnR and TOT easily as standby first thing in the morning while the 7 yr old does Jedi Training. Do Star Tours as a 4th FP.
 
I would say definitely Magic Kingdom and Epcot. Its a shame they will have to miss the other two parks. Is there anyway you can get park hoppers and do two parks each day? It would be a more complete experience.
 
For a group of kids, I vote Hollywood Studios. As a kid myself, I wasn't a huge fan of Epcot (a completely different story now) and try as I might- I can't get my little sister (7) totally into it. She kept asking where more rides were. The way I see it- DHS = thrills & fun, Epcot = educational & fun.
