I've only eaten at 2 of the full service restaurants at World Showcase: Italy's (forget the name), and Chef Des Frances.
I'd like to eat at Italy during my upcoming solo trip in January. I assume there is no bar there. Is this a place you could feel comfortable eating at solo? Or, how about Le Cellier?

Here's a second try! I wrote some reviews a couple of days ago on this board that include eating at Chefs, Alfredo's and Le Cellier solo. I had a wonderful time at all three, and the service at Le Cellier was better solo than when I revisited with my sister a couple of weeks later. The Italian waiter was very charming, inclined to friendly conversation, and really went out of his way to make me feel welcome and 'taken care of' during the meal. None of the restaurants made me feel self conscious about dining solo - it wasn't mentioned, obliquely referred to, questioned, or in any way seem unusual. They serve so many people a week, I doubt solo diners are something they haven't seen many times before! But anyway, before I lose my tangent - I give an unhesitating thumbs up for dining solo at all three
If this is your first time eating solo though and are likely to feel like people are 'watching' you because you are self conscious (as new experiences are wont to make us do) the Italian restaurant is mainly one big dining room, whereas Le Cellier is more broken up into rooms and has a more intimate atmosphere, so it feels like far less people are there to 'see' you. I don't know whether that would affect your decision at all, but thought I'd throw that in there just in case - have a great time, and please let us know how it goes! I love to read the dining reviews
