I use a Canon PowerShot A610. On sunny days I use "P" mode and set the white balance to daylight and the effect to vivid.

Thanks. I'm going to play around with my camera before our next trip. I know the white balance makes a big difference as I would sometimes forget to change it last year until after a few shots in the morning and my first morning pictures were colorless and too bright.
