Epcot: one day, one and a half, or two?

To give perspective, I arrived at EP last Wed at 1pm, ate lunch, rode SSE then FEA then Boat ride in Mexico. Completely explored the Norway and Mexico pavilions. Then went to Canada and UK pavilions and completely explored them as well. Then at 5pm got on boat to Swan for dinner at Il Mulino. Friday nite I went to EP about 6pm for dinner at Spice Rd and thoroughly explored that pavilion left around 8. Then on Sunday, I go to EP at 9:15 (had a snafu that made me later than planned). Went on LwtL, Soarin, Figment, did Character Spot then headed to China about noon for lunch. After lunch, explored China, Germany, Italy then American Pavillion. Watched Guardians show, saw Voices of Liberty and the American Adventure show. Then went to explore France. Finally headed to the Japan pavilion about 6, explored it and then went to dinner at Takumi Tei at 6:50. After dinner got a slushy from France and headed out about 8pm. Didn't stay for Illuminations cause I was tired and wet from the rain.
 
I would say 2 days as well. It's doable in less but would be rushed. We love Epcot and spend 2-3 days there each trip.
 

1.5 days would be the ideal for me. I like to explore the shops and that takes time. We just got back and it was pretty crowded; that plays into it as well. During the different festivals there’s a lot to see and experience too - that might take a 2-day commitment.
 
We did one day at Epcot on our last trip at the end of November, and a single day visit wasn't nearly enough. There was an extra morning hour that we used, and did most (but not all) of what we wanted to do in Future World, but got to the World Showcase mid afternoon and only had time to ride FEA, Three Cabelleros, a dine-in meal at Biergarten, and Illuminations. We spent so much time exploring/shopping in the Pavilions and looking for Chip and Dale on the holiday scavenger hunt, that we didn't have time to enjoy any of the shows (either live action performances or films).

For this next trip, we will definitely spend 2 days there. World Showcase is my absolute favorite of all the Disney Park areas to visit at night.
 
I usually want do 1.5 days. Fyi spring break crowds depend somewhat on when Easter falls. Easter is early this year so crowds may be starting to ramp up a bit by then.
