Epcot: one day, one and a half, or two?

We will either be spending one day at EP, 1.5 days, or 2. 1.5 days means rope drop to mid-afternoon first day and then a bit before noon-closing second.

With all the renovation going on (we’ll probably visit around spring 2020 during my spring break), is Epcot a one day park, one and a half day park, or two? We want to get all attractions done, streetmosphere isn’t important to us. Want to eat at Sunshine Seasons, Tokyo Dining, and Via Napoli.
 
How long are you going to be there?

Typically if I'm there for 6-7 days, I would do definitely get to Epcot more than once. I could see spending a full day there and then a half and taking the monorail over to MK.
 
You can get all the rides and shows done in a day if you go when crowds are ok and use like a touring plan. If spring means spring break you may have a problem with 1 day. I prefer to take my time at Epcot because I like exploring the World Showcase pavilions so if it were me I’d budget 1.5 days.
 

I think it depends on how long the overall trip is. We usually spend two days at Epcot. I think you can get all the attractions there done in one day, but it wouldn't leave much time for exploring the World Showcase. And I think to eat at those three places would be too much in one day too.

My spring break is quite early, typically around teh first week of March. I believe that most spring breaks are late March/early April so not too concerned about crowds... unless I’m wrong about when spring break normally is.
 
If it's during a festival where there are food and beverage tastings, I like to have park hoppers, stay in the Epcot resort area, and have multiple half days there. Too much good stuff to try, and not enough stomach space!

If you're more about the rides, and don't care much about wandering the pavilions and watching performances, then a day should be perfect to get all the big rides in. Epcot is transforming, but it's still less of a ride park and more of an atmosphere park.

In my family, we were usually a "park a day" people on 5 day trips. And the joke is we NEVER get to the World Showcase. I desperately wanted macrons from the French bakery last trip and couldn't do that either - too long of a line with a 2 year old. I'm excited to have more time to slowly explore.
 
Trip will hopefully be 6-8 days.
If you are doing an 8 day trip, we typically allot 2 days for every park but HS. You can do it in 1 unless you are a monster Star Wars fan.
If you are going for 6 days, you can easily do everything you want at EP in a full day at the park.
EP is a great park for EMH. This past May we left MK, showed up at 9pm at EP, (regular closing hours) and in 2 hours, we rode Soarin, Test Track and finished up at Frozen. (rode it 3x before closing)
 
1 morning in epcot and evening in epcot for sure. For us, we would add a second evening as well. so much to see and do.
 
I like your 1.5 day plan. That way you can get FP+ for the tier 1 rides on two different days. That way, you won't have to spend so much time waiting in line for those. On your rope-drop day, you should be able to get in most of the other tier-2 rides.

Not sure if you'll be using Park Hopper, but if you are, I think Epcot is a fantastic park to hop to. I do think it's worth multiple half days since there is a lot to see, particularly around World Showcase. However (and this may be sacrilege for some!) I inevitably find myself bored & tired when I have to spend an entire day on trips without the Park Hopper option. Unlike other parks, there's also not a lot of value from doing multiple rope drops/FPs at Epcot, since the most time-consuming part of the park, World Showcase, opens later, and because there are only 2-3 rides worth rope dropping/fastpassing for.

Also, for a trip in Spring 2020, it's unclear how much construction will be going on in Epcot. Much of Future World may still be under construction, making it temporarily less interesting to spend so much time in (similar to how DHS dropped down to a half-day park in the last few years due to construction).

We don’t do park hopper because it seems challenging and time-consuming, especially with my 3 yr old sister. We’d rather devote an entire day or two to a specific park as opposed to skipping around, especially considering how Disney transportation is these days and the distance between parks. If I’m wrong or to be countered on any of this though, please let me know! There seem to definitely be benefits to park hopping, such as stopping by on a resort day for just a meal or evening show. :)
