Epcot on MLK weekend

What would be the better day to go to Epcot? Sunday, Jan 19th or Monday, January 20th (MLK day).
 
We went this year late morning on MLK day (after a few hours at AK in the AM). We found it manageable, but we also didn't try to ride anything mid day without FP. I don't exactly remember wait times but do think they were a long. I do remember thinking it felt crowded, but nothing major. FP lines were about 20 minutes or more for SE and TT which we felt was long.

We got there saw the acrobats in France, went to lunch at Tutto Italia, saw voices of liberty then the American film. Stopped on the way over towards our Nemo FP to see a little of the British band. Used our FP for Nemo, SE, then TT. Rode the boat ride in Mexico, then ate at San Angel Inn. Probably a little before 830 we got in line and rode MS then went and rode TT. Illuminations ended as we were getting off, so we were walking out with the crowds. It was a long day, but it went smooth. We got to do everything we wanted.
 
We went to Epcot on the Sunday in 2018, rope dropped TT and Soarin', had FP+s for the Character Spot, MS and FEA, met Anna & Elsa and did the Gran Fiesta tour by 1:30pm, then spent the rest of the day in the World Showcase, and had dinner at Chefs de France before Illuminations. It was a great day and we took advantage of the Festival of the Arts stuff. It felt very crowded, but we managed to do everything we wanted. That was my first day back at WDW since 2012 though, so it might have felt worse than it was!
