Epcot for one day -- which day?

We are doing a road trip around Florida in October 2019, that connects with a cruise to Cuba. We want to spend one day at Epcot (won't have time for all the parks). Any recommendations on what day of the week would be best for lower crowds? It will probably be around the middle of October that we stop in.

Also, I've never had a car at WDW -- do they charge you to park at a resort hotel for a night?

The resort hotels do charge you - i think the price varies based on value, moderate or deluxe resorts. Just based off of my last trip in April we hit Epcot both on a Saturday and a Wednesday. Wednesday was noticeably lighter crowds. I think the weekends just bring in more people (saw many groups drinking around the world on Saturday but none on Wednesday). You might also want to look at if there is a big named group/person playing that day -- if someone good it draw more of a crowd. So i would pick somewhere between Monday and Thursday. Typically if the park offers Extra Magic Hours for resort guest some often suggest going on a non-magic hour day because it can tend to draw a little more of a crowd.
 
Weekends are a bit more crowded generally speaking, as more locals come in. Beyond that, IMO it doesn't make a bit of difference which day of the week you pick. If you put me in Epcot, there's no way I'd be able to tell you what weekday it was just by the size of the crowd. Go whatever day fits your schedule best.

I would try to avoid Fri-Sat-Sun. WS gets more crowded as the day goes on and people go out to eat and drink. During food and wine it can be annoyingly crowded on a Saturday evening.
 
As others said. Avoid Friday to Sunday. Otherwise, doesn't seem to make much difference.
