My favorites at Epcot are both of the San Angels (Inn and Hacienda) and Via Napoli.
I'm not entirely sure if the menu at the San Angels would work though, as they are not your typical "Mexican" food that you see in chain and the vast majority of local restaurants (e.g. no beef and bean burritos, no ground beef tacos, quesadillas, etc). The food isn't really spicy, but again, certainly not very Americanized.
