How early should I arrive for 8:00am EMH at DHS (9/3 labor day weekend) and Epcot (8/31)?

AT DHS, we'll want to go to RNRC and TOT. Ride each twice and then TSMM and maybe meet Buzz, then leave around 1030-11.

AT Epcot, we'll wait to ride Test Track twice, then head to Soarin'

RATS! I was somehow hoping that on EMH days, I wouldn't have to be as early as I am for regular opening.

Since I have your attention -- how about 8:00am EMH at AK, BUT I am not going to Pandora -- I'll head to Everest until we feel ill, making sure we stop early enough to get to safari ahead of the rope drop crowd.
 
Personally for AM EMH at HS I can do RNRC and TOT each twice in that 1 hour and then I have a FP+ for TSMM for as early as I can which is usually 10 minutes after official opening time.

At Epcot in the past I have been able to do TT only once during AM EMH as many times there's a "problem" with it not starting on time.
If all goes smoothly you'd be able to do it twice.

I tend to get to the parks a good 30 minutes prior to opening whether its an EMH day or not.
 

When we were there in February we got there between 730-745 (couldn't give you exact time though) and we were near the front. At HS we rode RNR 3 times and TOT once all with less than 5 minute waits (walked right on RNR first time-doors were open in the screening room you could just walk through the first 2 rides). In AK we did EE 3 times, and safari and walked right on all with no wait at all. Didn't do EMH rope drop at EP or MK though.
