ELectric light parade, fantasmic, and the like

It's been a while since we have been to WDW and there were no FP+.

If we don't use a FP for these events will we be able to see them at all? We'll be there the first week of February.

Yes. For good seating wait for the electrical parade about 30-60 minutes before the start time. For good seating at fantastic, I would line up 60 minutes before. We just came back and went in about 25 minutes to showtime and we had standing room at the back.

Yes you will be able to see them. We never use FP for shows.

As long as you get a spot for the parade early enough you will be fine and if you get to Fantamic around 45 minutes before the show you will be able to get a seat.
