Eggnog Cake

Hood (a local dairy) publishes this recipe every Holiday season. I made it one year and everyone loved it. They were begging for the recipe. When I told them how simple it was they couldn't believe it. It's really delicious. I'd say you could even add a little rum or brandy flavor too.


EggNog Cake_

Makes 12 Servings _

1 (18.25-ounce) pudding added yellow cake mix
Vegetable oil, according to package directions
Eggs, according to package directions
1 teaspoon nutmeg
1 cup Hood Golden EggNog_(or try_Hood Vanilla EggNog!), substitute for water (regardless of amount listed on package directions)

EggNog Glaze_(recipe follows)__

Preheat oven to recommended temperature on cake mix package. Spray sides and bottom of a Bundt pan with vegetable cooking spray, or grease with butter or margarine.

_ Combine dry cake mix with required oil and eggs, and nutmeg. Omit the required water, adding the same amount of Hood Golden EggNog in its place. Mix and bake according to package directions. Cool. Top with EggNog Glaze._ _


EggNog Glaze
_
Makes 1 1/2 Cups _

2 cups powdered sugar
2 tablespoons margarine or butter, softened
1 teaspoon vanilla
3 tablespoons_Hood Golden EggNog__

In medium bowl, combine all ingredients, adding enough EggNog for desired consistency.

Hi I would love to try this recipe however I have a question for the OP or anyone who has made it:

First it tells me to use 1 cup of Eggnog regardless of how much water cake calls for

1 cup Hood Golden EggNog_(or try_Hood Vanilla EggNog!), substitute for water (regardless of amount listed on package directions)

But here it seems to say to use the amount that it calls for the water

Omit the required water, adding the same amount of Hood Golden EggNog in its place.

Sorry maybe I am just reading it wrong! I would love to try this, I think DH and DMIL would like it too.

Ok, I have the printed version of the recipe from the paper (the one posted is directly off the website).

Substitute eggnog for water amount called for on package directions.

Thanks for this really easy cake..made this tonight..made 2 small cakes and 1 small bunt for Christmas that I just put in the freezer downstairs.. I used a white cake mix cause I never have yellow in the house cause I really don't like the taste of the yellow cake mix..added some rum..hubby and I had to "test" the small one and it was really great..will make the frosting Christmas Eve and frost it Christmas morning for our desert table along with fresh fruit and cookies and of course my Mickey cookies which I had to stop making till Tues night cause I AM EATING ALL OF THEM!! Also will be making the italian honey balls which is a tradtion in our family..oh boy I can feel all the 12 pounds that I lost coming right back on..must go back to the South Beach diet right after the holiday season..Have a Blessed and safe HOLIDAY..Marianne Thanks again Margie

Ah yes, Stuffoli! I have a recipe to try this year. My Aunt usually makes them also. Each year we get into this discussion about Stuffoli and how they aren't as good as some Great Aunt used to make. Apparently, nobody has been able to match her secret recipe. :p

I made this yesterday, and brought most of it over for my parents. :)

It was very tasty, and so easy! I didn't add any rum flavouring, although I might next time, plus a pinch more nutmeg.

I made one for the annual Holiday party with friends and they all were so excited about it. :hyper: Even before I uncovered it they were asking "is that the eggnog cake?"

Looks like it's now a Holiday tradition for us.
 
This cake got rave reviews from all who tasted it! Thanks so much for posting the recipe.
I did not use rum flavoring - I did use the real thing, though! Just enough to give it a nice flavor without being over powering. Maybe 1/8 cup? Anyway, it was really good and will probably become a Christmas tradition.
