While I'm not from DIS, I have edited my fair share of videos in the past.
In my experience, it's best to edit down to content that is exciting, engages the viewer but also gets the point across of what you saw and experienced. No one is gonna sit through the ENTIRE Lion King Show, but bringing it down to the finale when all the animals come together would be cool. It leaves the viewer saying "that looks like a cool show—I'd love to see more."
For fireworks, I usually edit down to the best parts. The finale is usually the best. I like to go onto
YouTube and download the show instrumental if it's available and add it. The GoPro usually has that underwater sound to it, so adding the music (even if it means getting rid of the fireworks "pop" and "boom") makes it more interesting.
For rides, just play around with it. Slow it down, speed it up, go in reverse. Have fun.
If you happened to tape character meets, grab snippets of Mickey waving you over or doing something fun with you. Use this as b-rolls. Even with the parades - no need to show the entire parade, but a clip of Mickey or Chip & Dale waving could be a nice b-roll.
