There's a limited pool for those that can trek down during these times due to school, work, etc. As such, most of the pulling people in is done from the off-site resorts. This is one reason FD works so well.That was our plan, but with all the talk about free dining really drawing people in, I'm a bit concerned that I may have overestimated our ability to do that. We are taking advantage of an unexpected break in our girls' school schedule and only going for 5 nights so we want to see as much as possible in that time without exhausting ourselves. We are so excited to be able to visit Disney in a cooler and less crowded time.
There may be a slight uptick over time in overall park attendance, but it's still likely to be quite slow compared to the moderate times (like October, mid-Spring away from Easter, etc) and it'll seem dead compared to the busy times

In other words, don't sweat it (which, you won't be doing by going in the end of Jan anyway!

Since you're not planning to pick up the DDP, this makes things easier too, as you can decide on the fly if you can't get anything appetizing, to just hop into a CS place. So, overall, your plan sounds great
