My wife and I love to eat at the bar when we're out and were wondering if this is walk up only at WDW? Also where are good spots to do this at WDW, especially in the parks?

Hello from one bar lover to another :drinking1

I can't speak to what is or isn't walk-up but in the parks there are a few bar options that I think still offer walk-up. Ones that come to mind are Rose and Crown (Epcot), Nomad Lounge (Animal Kingdom, though note they have a virtual walk-up list), Yak and Yeti (Animal Kingdom but note it only has like 6 seats), & Baseline Taphouse (MGM).

In the resorts a few that come to mind are Geyser Point, 3 Bridges, Dahlia Lounge, Ale and Compass Lounge, and Toppolinos

When we were there early Nov they were not allowing seating at the bar in Rose and Crown, only allowed in for takeout. We have enjoyed the former Wave bar (now Steakhouse 71), Outer Rim, and California Grill bar all in Contemporary (short walk from MK), Tambu Lounge in Poly (monorail ride), Yak and Yeti (favorite) in AK, Tutto Gusto at Italy Pavillion (really nice) in Epcot, Geyser Point at WL (boat from MK), Blue Zoo bar at Dolphin, and Big River Grille at Boardwalk both a short walk from Epcot., the Baseline Taphouse in HS is nice but just small plates. So yeah we have walked up to a few bars to eat. :)

Sadly, most of the bars that you enjoyed, are closed or modified into dining space.
Our favorites: Rose and Crown is take out only or dine in, California Grill has no bar area currently, Tutto Gusto is now seating for the restaurant, Blue Zoo has greatly decreased their menu. We LOVED it in the past, now, sadly an easy pass. Baseline is small plates at best, but nice craft beers.

California Grill bar was open when we checked in early November however they had no seats to accomodate us at the time so we hit Outer Rim, (nice bourbon flight there by the way) Tutto Gusto bar was open when we stopped in, didn't try Blue Zoo this trip.

True, the bar was open but totally filled when we were there. The area that used to be the lounge area is now tables for the restaurant. So the bar seating is about 10 seats total (maybe?).

MGM name has been gone for almost 15 years.

Yes that is what we were told at the check in desk.
