Ugh! We were doing well and then my husband started fixing the ceiling again and now I have no stove again! And to boot we just found out that we are expecting:love: so now is the time to budget but first I need my stove!

Congrats! That is wonderful news!

We are having hamburgers, corn on the cob, and onion rings. I had to call mom to pick up ground beef though because what I THOUGHT was ground beef was actually cube steaks. :headache:
 
I am going to have to bow out for this week! I am going to the beach to work with the family I nanny for. I am taking my favorites for lunch, but dinner will be out each night! Then I am home for one night, heading to Savannah afterwards for the Fouth of July weekend. We plan to eat lunches out, and dinners in our condo with full kitchen. Good luck everyone!

Today is my cousin baby shower so we will not be eating at home today. Tomorrow us anOther family cook out too
 

This week has been hard for me. I don't know what the deal is, but nearly every night I am tempted to get something out. I'm not super busy or anything. It's just a craving for pizza or chinese, KWIM? I have not given in though!

Tonight is Italian Chicken and Tricolor Pepper Skewers with Long Grain and Wild Rice.

It is soo hard when just not in the mood for what we have in fridge. i totally understand !!

I am getting ready to do a big marinara sauce, we have tons of tomatoes in garden, no way we can eat them all and Im sure the neighbors prob have enough too lol.

Also gonna do a batch of meatballs, will throw both in freezer for later and tonight will be meat ball poboys.
 
Just got home from Sam's Club. Freezer is mostly restocked, but at least this time it is with stuff we always use. I am good to go on ground beef, steaks, and salmon. I would have liked the get chicken and pork chops, but don't have the room quite yet. I am going to mess with my July menu's to try and use up even MORE of what we have up there!
 
so I started to make up daily menus...whew that was alot of work, its easier planning my Disney vacations! :lmao:
My son will be 12 and of course home everyday and likes structure ;) so to keep my sanity we came up with a daily/weekly menu :goodvibes

Ok so here is the week...
Sunday
Breakfast Blueberry Pancakes & Bacon (making a big batch so my son can have them during the week)
Lunch- Cold Cut Sandwiches
Dinner- Seafood Nachos

Monday
Breakfast- Ham & Cheese Omlet
Lunch- Mac-n-Cheese
Dinner- Chicken Sandwiches & Season Fries

Tuesday
Breakfast- Blueberry Pancakes
Lunch- Chicken Nuggets
Dinner- Steak & Veggies on the grill

Wednesday
Breakfast- Cereal
Lunch- Fruit Salad (farmers market in the morning)
Dinner- Fish on the Grill w/ Baked potato's

Thursday
Breakfast- Blueberry Pancakes (with some fresh blueberries on top)
Lunch- Salad's & fruit
Dinner- Chicken & Veggies on Grill with Salads

Friday
Breakfast- French Toast w/Fruit
Lunch- Pasta Salad
Dinner- Shrimp on Grill with veggie or potatoes

Saturday- who knows! :rotfl2:its looks like its gonna be one of those weekends so maybe pop-tarts on the way out the door and dinner at grandmas...lunch??

I always do this during the school year, time is precious early in the morning ;) but i'm telling ya in the last couple months that boy has gone from some days eating normal to some days hardly eating at all... to now eating all the time! popcorn::popcorn::
 
Tonight my Grandma is coming over for dinner and I am making spaghetti with homemade turkey meatballs, garlic bread, and salad. For dessert she is bringing turtle pie.
 
Had a good weekend, but I REALLY miss DH! :sad1: He is on a mission trip on an Indian Reservation with little to no cell phone reception, so communication has been minimal. That makes it so much harder.

Did my grocery shopping for the week yesterday. Here is our menu for the week:

Sunday-
Taco Salad
Strawberries with a little sugar

Monday-
Oven BBQ Chicken
Garlic Mashed Potatoes
Roasted Corn

Tuesday-
Pepperjack Braid (new recipe)
Apple Slices

Wednesday-
Broccoli and Sausage Penne (new recipe)
Garlic Toast
Caesar Salad

Thursday-
Roasted Whole Chicken
Cornbread Stuffing
Mac and Cheese (for the kids who REALLY do not like stuffing)
Green Beans

Friday-
Will probably pick up pizza
 
This thread is a good inspiration for me. I'm usually not too bad during the week, but the temptation to eat out on the weekends is great.

This weekend I made a delicious taco casserole inspired by the filling from this lentil taco recipe and a taco casserole recipe I ripped off a box of taco shells a couple years ago.

Taco Casserole

Ingredients
1 batch of lentil taco filling from this recipe (except I used veggie broth instead of chicken)
1 package of hard taco shells or a bag of corn tortilla chips
1/2 or 1 whole bag of frozen corn
1 can of black beans, drained and rinsed
1 can of pinto beans, drained and rinsed
1 little can of diced green chiles (4 oz)
16 oz taco sauce
2 cups of grated cheese - I used a "mexican blend"

Preheat oven to 375 degrees and grease a casserole dish. I used 9x13, but a slightly smaller size would probably work if it's deep.

First cook the taco filling according to recipe. Once you get to the point in the lentil taco recipe that you take the lid off the pot, add the corn, black and pinto beans, chiles, and taco sauce and mix it up. Cook over medium or medium-low for another 4 or so minutes.

Spread broken taco shells or corn tortilla chips across the bottom of the casserole dish. Put half of the filling mixture over the taco shells. Sprinkle half the cheese. Repeat previous three steps with the rest of the ingredients.

Stick in the oven and cook for 20-24 minutes or until cheese is melty and bubbly.

Once done, you can garnish with sour cream or whatever other taco extras you like.

Note: the original taco casserole recipe from the back of the taco shell box used ground meat + taco seasoning packet, had no corn, and no beans. I'm a vegetarian which is why I made the changes I did, but I imagine this will still taste yummy if you use ground meat + taco seasonings instead of my vegetarian version. It's a very flexible recipe, and I always love eating the leftovers at lunch the next day :)

Your menu sounds yummy! I would absolutely love to read your blog, but the white font with the gray background is actually painful for my eyes.

I'm sorry to hear that. It's hard to choose a layout. Much research I did said that white text on a dark background is easier on the eyes for most people (including myself). Sadly, I don't think I could pick something that would work for everyone so someone is going to be left out. I really do hate that you can't read it.
 
I spent the day with my cousin for a girls afternoon. We went out to lunch, saw Bridesmaids and shopped. I then stayed at her house for dinner and my aunt made ham, corn, and Au Gratin potatoes with chocolate cake for dessert. Mom stayed home and had tuna salad sandwiches.
 
Had the bruschetta chicken bake Sunday night that someone posted from allrecipes.com and it was really good

Went to Chuck E Cheese for my daughter's birthday tonight. Spent $38 on pizza, salad bar for my husband and I and drinks and tokens-used a coupon.

Tomorrow night we are having chicken cordon bleu and artichokes and rice pilaf

Need to make a meal plan using as much stuff from pantry/freezer as possible till July 9---leaving to stay with in-laws on July 10 in South Carolina
