Tonight we had ham steaks and carrots with bake potatoes. Tomorrow is steak tacos and spaghetti with sauce for those who do not like tacos
 
Tonight we are heading out to dinner with my Grandma. She has a coupon to her favorite restaurant that she is dying to use.
 
Friday night egg salad sandwiches
Saturday will be chilli dogs made from left over homemade chili we ate 3 days dinner and hubby took it two days for lunch at work
Sunday will be steak burgers with onion rings and corn on the cob.
 
I have a question for you all what is a great meal to serve to your friends we are having family friends with kids over tomorrow and I can't figure out what to serve. Thanks for your help

My go to dinner for friends and family is lasagna. It is easy to make, filling, and not that expensive.

I like lasagna for gatherings too. My other go to meals are a taco bar or chili. I can't think of anything else right now. My mind keeps drifting to grill. :upsidedow
 
I am making chicken chipotle tortilla soup for dinner tonight. We are still all sick with a cold here:sick:

My friends and I always enjoy simple comfort foods. Some of the ones we have made lately while together are

Sloppy joes
Pizza (cooked at home using boboli pizza crust)
Spaghetti and meatballs
Build your own tacos


Tonight I am making the macaroni and cheese I had planned to do last night.

Roast chicken tomorrow
Sausage and peppers Tuesday
chicken cutlets with rice
??
???
Still have to work out the rest of the week. Shopping tomorrow.
 
Trying to get my blog back up and going, but I don't promise anything until the end of the month. School is kicking my behind at the moment, but the semester is almost over (Finals are the first week in May). I can do this!

Tonight it BBQ chicken on the grill, onion/potato/carrot packets, and rolls. I have to have potato rolls with BBQ Chicken. No idea why... it's just one of those things.

Oh, and mom made a chocolate cream pie... no clue why as I won't really eat much, if any. Oh well...
 
We've been waaaay off track during my FIL's final illness and passing but I think we're ready to get back to normal life. Here's my menu:

Saturday
We went to a Final Four BBQ at our neighbor's. I brought homemade baked beans. Hubby brought beer;) There was a raw veggie platter and our neighbors did ribs that were very yummy. Someone made the best brownies with strawberries and ice cream. I ate waay TOO much!


Sunday
We usually go out to brunch on Sunday. Today I made pancakes and bacon instead. We rarely have bacon (I bought it to use in the beans) so this was a treat!

Tonight we're having burgers on the grill with homemade buns, beans from last night that wouldn't fit into my serving dish and a broccoli salad. That's the last of the broccoli. We just pulled up most of the winter garden to get ready for planting a spring/summer one. All that's out there now is a bit of lettuce.

Honey ginger carrots
Cornbread

Tuesday
Baked tilapia
Brown rice pilaf
Green peas

Wednesday
Spaghetti and meatballs
Green salad
Garlic bread

Pan roasted chicken

From the King Arthur website the ones we made and they were good- a bit denser than what we were used to but I think that was my over working the dough vs the recipe. I would make them again. It was easy!

Ingredients

3/4 to 1 cup lukewarm water
2 tablespoons butter
1 large egg
3 1/2 cups King Arthur Unbleached All-Purpose Flour
1/4 cup sugar
1 1/4 teaspoons salt
1 tablespoon instant yeast
Directions
1) Mix and knead all of the dough ingredients—by hand, mixer, or bread machine—to make a soft, smooth dough.

2) Cover the dough, and let it rise for 1 hour, or until it's doubled in bulk.

3) Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round 1" thick (more or less); flatten to about 3" across. Place the buns on a lightly greased baking sheet, cover, and let rise for about an hour, until very puffy.

4) If desired, brush buns with melted butter. Or brush lightly with egg wash (1 egg beaten with 1 tablespoon water), and sprinkle with sesame seeds.

5) Bake the buns in a preheated 375°F oven for 12 to 15 minutes, till golden. Cool on a rack.

Tonight we had baked ham with scalloped potatoes, steamed carrots, and orange jello.
 
Trying to decide what I'm in the mood for. It's either ham, broccoli, and cheese quiche or shrimp scampi. I'm leaning towards the quiche.
