Eat at home

Just spent at least 3 hours simultaneously making my meal plan/ordering food online to go pick up later. I made it through working 6 - 12 hr night shifts within a 7 day period. We didn't eat out for 8 days :cool1: We did eat out yesterday though, but it was a planned thing.

I'm going to be working 4 - 12 hr shifts next weekend. The result of all of this working will be 24 extra hours on my next paycheck, 16 of which will be time and a half :cool1:

Here is my dinners planned:
beef barley soup with homemade bread
pot roast with potatoes, carrots
chicken pot pie
corned beef dinner-cabbage,carrots,red potatoes,irish soda bread
lasagna
sweet and sour chicken with rice
Pork Roast with mashed potatoes or something?
Steak with rice a roni and a veggie
 
This week is a tight one. So the meals will be light

Tonite is Crusty chicken thighs with mushrooms
Monday Grilled ham and cheese sandwiches with chicken Soup I think. I am in the mood for some homemade soup *and I have left over chicken the stock and I'm good to go

Tuesday- maybe breakfast for dinner Pancakes and bacon

Wed. Chicken cutlets, rice and green beans

Thursday- stuffed peppers with pasta

Friday- Homemade Pizza.

Saturday- maybe hot dogs and fries.
 
Well DH now has to work 12pm-8:30pm- so he is not there for dinner. But I am still trying to not go out, we have been doing much better.
Today I am making turkey burgers(alot too so we can have them for lunch) and roaster asparagus with parm cheese
I am also making Paula Deens shrimp and wild rice receipe I found on the food network website- it looks really good. That should get us through a few days. Then something in the crockpot for Wednesday and Thursday- something with chicken???
 

We're having cube steak with green peppers, onions, and gravy over potatoes and another veggie tonight. I got the cube steak on a really great sale. We haven't had it in a long time.
 
Tonight we are taking the leftover roast beef and making french dip sandwiches with oven fries and fruit.
 
Here is our menu plan for the next week and half or so:

Sun: Chicken Tortilla Soup with cheese nachos

Mon: Crockpot Beef Roast with mashed potates and green beans

Tues: Mostacholi bake with breadsticks

Weds: Chicken fried rice with pineapple

Thurs: Dance night - quick dinner out

Fri: Chicken patty sandwiches with chips

Sat: Lunch at Famous Daves for DSS's birthdays. DSIL and family are staying with us on Sat night so we will have Tacos for dinner. I bought the shells and meat today and will have her provide the toppings.

Sun: Big family breakfast - Sausage gravy & homemade biscuits, scrambled eggs and hashbrown patties. For dinner DH and I will have steaks and baked potatoes. DD will have whatever I find in the cupboard for her :rotfl:

Mon: Breakfast for dinner -- Ham and Eggs or Pancakes and Bacon - I have supplies for both so we'll decide that morning.

Tues: Chicken & dressing with pears

Wed: Cube steak, mashed potatoes and corn

We need to stay right on track these next two weeks. Budget is tight due to DSS's birthday.
 
Not a clue what is on the menu this week, but have a freezer full of Venison , fish, pork and chicken. Food isn't an issue it is what to do with it lol, guess I need to put my thinking cap on.

Tonight for sure is hamburgers and spaghetti. I have a cpl of lbs of ground deer/pork defrosted that I have to do something with.

Thursday will be corned beef and soda bread with what ever Irish side dish I can come up with.

Now to sit down and make my produce grocery list up so I can figure out what to eat the rest of the week.

We ate out Friday, Saturday and this afternoon so NO eating out for at least the next week.

Last night did not go as planned. I took an allergy pill right after lunch since my alleries were really bugging me and I ended up falling asleep until dinner time. So instead of mac and cheese I made us English muffin veggie pizzas and cantelope slices.

Tonight I am making roast beef with mashed potatoes, corn, and fresh sliced fruit.

The rest of the week will be, in no particular order

Roast beef sandwiches with fruit salad
Chicken stir fry with rice
Sausage and cheese strada
vegetable beef soup
corned beef sandwiches with sweet potato fries
grilled cheese and tomato soup
cheesy ham and hashbrown casserole
 
we have all been sick, so we've not beein sticking to the plan lately :headache:
However I am starting to feel better, so this week I will be making an effort to cook.

Monday: pepper steak with rice (it's in the freezer, I just need to make the rice)
Tuesday: Corned Beef and Cabbage with potatoes and carrots (yes, a couple days early)
Wednesday: Steak, broccoli and salad
Thursday: leftovers from Tuesday (I might make it into corned beef hash, otherwise it will be sandwiches)
Friday: Planned eating out (we'll be out of town for a couple days).
 
Sunday-Chili
Monday-leftover chili
Tuesday- Tacos
Wednesday-Grilled Cheese/Soup
Thursday-Corned Beef, Cabbage and Teeny Tiny Potatoes
Friday-BBQ Chicken/rice
Saturday-???
 
Well my Friday did not go as planned either. ;) It was just my husband and me and when he called me on the way home we both decided cereal and an early bedtime would work for both of us. We're so boring! Then Saturday went pretty much the same way - we just grabbed something out of the fridge. It's funny, getting supper on the table at a decent hour is so hectic during the week, when our younger son is not there we just turn into sloths.

Last night we finally had the grilled steak dinner. Today is Pi Day (3.14 - March 14th) so I think I'm going to make pizza. :laughing: The rest of the week? Not sure. It's supposed to rain all day tomorrow so that precludes grilling out. Wednesday I buy groceries after work so I usually bring home something quick to cook or get sandwiches or a rotisserie chicken while I'm at the grocery store. Thursday will most likely be something grilled, Friday too.

Whole boneless pork loins were on sale this week for $2.18 at my local Ingles so I got a couple - cut them in half and froze one as is for future use and marinated the other one - 1/2 was a maple marinade and the other was a pineapple/teriyaki marinade. Yum!

The chicken marinade listed on the back of the Old Bay seasoning can is FANTASTIC if you haven't tried it, and I've got marinated chicken breasts in the freezer too. And some ground venison . . . sounds like tomorrow might be spaghetti night!

A note about the marinade recipe on the Old Bay can - the recipe is per 1 pound of chicken - I normally have to triple or quadruple it depending on how much chicken I'm marinating.

Well last night I had diner out with my moms group and one of the moms blessed us by paying for the bill:hug: I do not have time today to go food shopping but here us what I have for meals in the house

Today ham steaks with baked potatoes
Tomorrow chicken with the new Philly cooking cream
Wednesday pasta
 
We are having ham steaks tonight too, but with baked beans and another veggie. I can't get over the price difference in ham steaks now as opposed to about 6 months ago. They are much smaller now and what they did at a larger size. They are still a good value, but we don't have left overs like we used to. I used to be able to dice the leftover ham and put it in quiche.

I bought 2 ham steaks at Wal-Mart for $3.98 each. I can't remember the size but it was somewhat decent. By today's standard. At BJs 3 ham steaks cost $15 and change. BJs wouldn't have been a bargain there. But it was a bargain for popcorn. Oh well.

Here's what I'm thinking for the week:

Mon.- Beef tacos
Tue.- Breakfast for dinner
Wed.- Rotisserie chicken & veggies
Wed.- Ham steak and beans and something
Thurs.- Chicken enchiladas (from leftover chicken) and a salad
Frida- Pizza made at home (with pre-made dough w/yeast)

Tonight we are having meatballs, pasta, and home-made bread! Can you say carb overload?

I already made the meatballs this morning and have set my "Artisan Bread" on the counter to rise. I love the basic recipe for "Artisan Bread in 5 Minutes a Day." It is soooo easy and fresh bread is always just a loaf away. I will provide the link for the basic recipe. Yup, it's that easy!!

I have vegetable beef soup in the crock pot as I type this and the house smells yummy. I will be making garlic cheddar biscuts to go with it. We should have enough leftover for lunches the rest of the week.
 
Monday - Chicken casserole (chicken, rotini, black olives, tomatoes, garlic, seasoning packet) and tossed salad.

Tuesday - Eggs, "popplers", clementines, strawberries

Wednesday -Frozen cheese ravioli with marinara sauce, sugar snap peas, garlic bread.

Thursday - Hamburgers, fries, corn

Friday - Tomato soup (homemade), grilled cheese sandwiches.

Saturday-

Sunday - ?

Changing it a bit.
 
So after food shopping today here is what I have

Tonight ham steaks with carrots and baked potatoes
Tomorrow chicken
Wednesday spaghetti and sauce
Thursday corn beef and cabbage :thumbsup2
Friday pizza and a movie
Saturday maybe beef bake
 
Sometimes eating out does you good but in line with tightening your belt I put aside the money I save with coupons to afford the occasional meal out at places where you can further use coupons.
