Eat at Home 3!

I spent Tuesday helping family & wasn’t home to shop, so we ended up getting pizza.
Wednesday home made subs & chips
Thursday meatballs in sauce, mashed potatoes, asparagus
Friday possibly going out for a fish fry
Saturday breaded chicken sandwiches, fries
Sunday baked corned beef, sautéed cabbage & carrots
Monday chicken soup, rolls
Tuesday roast pork & potatoes, broccoli
Wednesday grilled steak & baked potato (husband) salmon, sweet potato (me),
 
2026 has been kicking my butt so far, and I don’t even have a WDW trip to look forward to this year.

I’m trying to find quick and easy meals that don’t take long to make. I love to cook but just don’t have the time right now. I’m using the air fryer a lot and discovered the Trader Joe’s salad kits for lunches.

The next few dinners will be:
Chicken pot pie
Spaghetti bolognese
Pozole (this will take long to make but it’s one of the rare Sundays where we have no plans)
 
We are a little less than four weeks out from our next Disney trip - and spring - so we are trying to use up some freezer items before we go...partially to clean out the freezer to make room for my next round of seasonal freezer prep, but also just because I'm tired of winter food and want it gone!

Sunday: Chicken Alfredo Stuffed Shells with salad and homemade garlic bread
Monday: Fried Clams(prepared fresh and flash frozen from a local meat department), fries, potato salad
Tuesday: Honey Garlic Chicken Rice Bowls
Wednesday: Cheeseburger Sliders with loaded potato wedges or onion rings
Thursday: Homemade waffles and bacon
Friday: Homemade pizza
 
So far this week:
- Teriyaki Sriracha chicken stir fry, rice
- Rotisserie chicken, Mac and cheese, roasted green beans
- turkey tenderloin, mashed potatoes, green beans
- bbq chicken bites, fries, cucumber slices

Tomorrow- pasta parma Rosa, cucumbers
Friday: baked shrimp, cheddar and bacon potatoes, salad

Next week:
- ham, scalloped potatoes, green beans
- mini hot dogs, fries, salad
- steak, baked potatoes, green beans
- BBQ chicken pizza, salad
- creamy baked pasta, salad
 

Monday: DW made some sort homemade throw together pasta with chicken and spaghetti sauce (it wasn't very good, lol);
Tuesday: we had to go vote, so we shared a burger at Chilis ($15 for 2 people);
Wednesday: chicken alfredo (with homemade alfredo sauce) and garlic bread and salad (for me);
(We froze the leftover, so I'll have to Google to see how many days it can stay in the freezer and still be good)
Thursday: tacos and rice;
Friday: homemade pepperoni pizzas (We've got some friends from back home coming to stay with us for the weekend);
Saturday: eat out for our friend's birthday (after she and DW go and get matching tattoos);
 
Thursday - was Pasta & meat sauce
Friday - used a Christmas gift card to our favorite restaurant, had a great fish fry
Saturday - roast broccoli & cauliflower pasta
Sunday - Tuscan chicken with farro
Monday - Pepperoni or ham & cheese stromboli
Tuesday - teriyaki veggie & beef stir fry with rice
Wednesday - grilled polish sausage, cheese or jalapeño pierogi
 
Two weeks out from Disney....still cleaning out the freezer for a spring restock but more so to make room for our college kid to have easy to prep foods for lunch and dinner as he was just offered a summer internship - that starts in March - the day after we leave for Florida(he wasn't going due to classes and he's staying with our dog)...anyways, here is our menu for the next week...

Saturday: Homemade Italian Chicken Tenders, fries/onion rings
Sunday: Meatball Subs - homemade rolls, salad
Monday: Sausage Orechiette with broccoli and garlic bread
Tuesday: Buffalo Chicken Quesadillas
Wednesday: Toasted Cheese/Tomato Soup
Thursday: Sloppy Joes with fries
Friday: Pepperoni Stromboli with salad
 
Thursday: grilled steak, baked potato (husband) salmon, rice pilaf (me)
Friday: baked meatballs (husband) breaded pork chop (me), mashed potatoes, spinach
Saturday: chicken noodle soup
Sunday: pot roast w/ potatoes, carrots, onions & mushrooms
Monday: use a gift card from Christmas after an afternoon movie
Tuesday: beef ribs, garlic pasta, mixed vegetables
Wednesday: French toast, sausage
