Eat at Home 3!

Here are a few inexpensive cook-in-bulk things I've done recently. I'm mostly cooking for one, so anything I make in bulk has to be something I really like.

Red beans & rice. Smoked hocks were on sale over the holidays. I have two more! One of those will go into a batch of collards. Not sure what the other one is going to.

Chicken & red lentil soup. I threw in some lacinato kale. For some reason there was a shortage of chicken thighs in my store---none at all. I used bone-in/skin-on turkey thighs instead.

My grocery had boneless top round on sale for $6/lb. I've got a 2.5 lb roast sitting in the fridge now with a salt, pepper, garlic, and rosemary rub. That's going in the oven later today to set me up with roast beef sandwiches.

I love the chicken and lentil soup recipe you linked! I’ll put it on the lunch meal prep list for next week.

Sunday - Fried Eggs, Bacon & toast for dinner (forgot to thaw meat, lol)
Monday - turkey breast, beans, veggies
Tuesday - leftovers
Wednesday - Canned soups for everyone
Thursday - Frozen pizza
Friday - Chili over rice
Saturday- Leftover Chili with cornbread
 
Today - Chinese take out to go with football playoffs (we will pick it up to save the delivery fee/tip)
Monday- Marinated london broil with roasted potatoes
Tuesday (at my parents)- Tacos with everyone's preferred toppings
Wednesday (at my parents)- my dad has suggested he would like to go out to dinner which is a bit of a miracle so if he's still on board then DH and I will accommodate to make it work. Back up plan is sweet and sour spiced pork chops with rice (will punt this to next week at the parents if the dinner out comes to fruition). He hasn't been out to eat in probably more than 6 months so if he's up for it we will make it happen.
Thursday- Something easy so either breakfast for dinner or grilled cheese and soup
 
Tonight: pancakes, bacon, fruit salad
Tomorrow: Aldi take and bake pizza, salad
Tue- skillet gnocchi and grilled chicken with spicy sauce, cucumber slices, garlic bread
Wed- mini chicken sandwiches, fries
Thur- orange chicken, rice, broccoli
Fri- pasta with pesto, salad
 
And here this week's menu using items on hand...

Sunday - pork loin, roasted potatoes, leftover cornbread
Monday - Cheeseburger macaroni
Tuesday - leftovers (🤞hopefully)
Wednesday - Enchiladas & rice
Thursday - Street Corn Chicken bake
Friday - leftovers
Saturday- grilled cheese & tomato soup
 
We're going to try something new this week. We went to the store today to pick up a few odds and ends that we needed in order to make it through the week. So we're going to try a no spend week. We're going to try Monday through Thursday. If we can not spend a dime in 4 days, we'll reward ourselves with a night out on Friday. If not, we'll eat at home Friday night, probably a homemade pizza.

Tonight/Sunday; Leftover meatballs and mashed potatoes;
Monday: homemade shrimp alfredo and bread (maybe a veggie too);
Tuesday: Chicken fajitas for DW, not sure for me as I have bible study;
Wednesday: choir and bible study, so probably sandwhiches;
Thursday: sausage wraps or poor man's spaghetti/garlic bread;
 
I'm definitely getting inspired and hope to eat from the pantry and supplement as needed.
Tonight was Meatloaf
Monday = BBQ chicken, threw it in marinade after I got home from Grocery store this an. Trying to plan ahead.
Tuesday - hot dogs and Mac n cheese
Wednesday. Pork chops in air fryer
Thursday = perogies
Friday = probably pizza
 
Two weeks out from our next Disney trip so we are trying to get the freezer cleaned out a bit...

Saturday: Pretzel Melts, homemade potato wedges
Sunday: Baked Potato Soup
Monday: Honey Garlic Chicken Rice Bowls
Tuesday: Tacos/Chips/Queso
Wednesday: Alfredo Lasagna with salad/bread
Thursday: Burgers
Friday: Homemade pizza
 
Today we wrote out meal plan (DW did this one) for this week and then we proceeded to spend $146 at Walmart. And guess what we had for dinner? We made some homemade cheese quesadillas. Grated cheese, tortillas and butter all put together in a skillet. Cost about $3 for both of us combined. Lol. Didn't even use a single thing we got at Walmart today. About right. Will start using that stuff tomorrow as we're going to a church gathering for dinner, and we have to take 2 big pans of homemade baked beans.

Then it's off to the next week. Going to try and not eat out this week and cut down on the money we spent on food last month (about $1,500). So here's the plan:
Sunday: Church going away party for music minister's family;
Monday: sausage wraps (we didn't eat them Thursday);
Tuesday: tacos and rice;
Wednesday: baked potatoes with grilled chicken on them;
Thursday: homemade pepperoni pizza and garlic bread;
 
That's so awesome. My niece just started down there as part of the college program, and she's already trying to get me to take a trip. Says she'll even pay for my hotel since she gets it at a discount. I've got airline miles, so all I'd have to pay for is food, which I'd have to pay for here anyway.

I ended up sick last week so a lot of this is carried over.

Tonight: skillet gnocchi and grilled chicken in arrabiatta sauce, salad
Tomorrow: I'm out with a friend
Tues: BBQ chicken pizza, salad
Wed: pasta ala vodka, salad
Thur: Orange chicken, rice
Fri: chicken empanadas, corn
 
Today: homemade spinach pizza
Sunday: pork roast, spaetzle, green beans and carrots
Monday: beef and broccoli stir fry, rice
Tuesday: kielbasa skillet
Wednesday: tomato soup, grilled cheese sandwiches
Thursday: sheet pan salmon and veggies, chicken tenders for DD
 
I am not a big sports person but we are grazing tomorrow for the superbowl. What does everyone do for party foods etc?

Tonight is leftover quesadillas and chips
Tomorrow: Chili, mini hot dogs, chips, dip, veggies, mini pizza rolls, pizza
Monday- leftovers
Tuesday- Grilled chicken with mac n cheese
Wednesday- grilled cheese sandwiches
Thursday- breakfast for dinner
Friday-??
 
We just returned from a Superbowl/Valentines day cruise and came home home to a broken air conditioner🥺 so time to tighten the belt even more and try to eat from our freezers & pantry.

Sunday - Spaghetti with chicken meatballs
Monday - leftovers
Tuesday - Parm & Herb pork loin chops with veggies
Wednesday - Ground turkey stuffed bell peppers
Thursday - Sirloin steaks and veggies
Friday - leftovers and salad
Saturday- going out to dinner with friends for my birthday🎂
 
I need to get back on track. We’ll see how this works out. I’ve been struggling with dinners lately.

Sunday: loaded baked potatoes soup with a green salad
Monday: One pot chicken an rice with roasted asparagus
Tuesday: tacos with Spanish rice
Wednesday: chicken pot pie with rice
Thursday: tortellini Alfredo with a bagged salad
Friday: nachos with leftover taco stuff.

Edit: DH works from home and has leftovers for lunch.

Wed- chicken quesadillas, salad
Thur- baked stuffed shells, salad
Fri- ordering pizza with friends
 
This week, my local grocer had boneless English roast for $6/lb. With one 3.5lb higher, they threw in: 1lb carrots, 3lbs russet potatoes, and 1.5lb yellow onions. (They also included a cook-in-bag spice packet, which I threw away. No Thank You.)

I took 2lb of the roast plus the carrots, half the potatoes, and 2/3 of the onions, plus some good quality beef stock and a bundle of fresh herbs (rosemary, thyme, and sage) a little bit of flour, and made a great batch of stew in the slow cooker.
 
Things have been a bit of mess the past couple of weeks....dad came down with bronchitis and upper respiratory infection, our car was totaled, had to deal with a rental and buy a new car unexpectedly. Everyone is fine, but I'm trying to get back on track since we have just been kind of winging it:

Monday: Grilled cheese and soup for me, DH had a frozen french bread pizza
Tuesday (back at parents): Ravioli, sauce, Italian bread
Wednesday (still at parents): Roast beef, mashed potatoes, and homemade gravy
Thursday (back home): fried chicken cutlets of some sort (maybe sandwiches, maybe with rice)
