Eat at Home 3!

Haven't done this thread in a while. :)

Monday: Chicken, rotini, tomatoes, and garlic tossed in olive oil; tossed salad
Tuesday: Chicken salad sandwiches, baked beans, left over tossed salad
Wednesday: Bean burritos and spanish rice
Thursday: Lithuanian Porkchops (sliced potatoes layered with porkchops baked with Worcestershire/onion/beef broth sauce), cooked carrots, and baby corn.
Friday: My mom is coming up and cooking - don't know what she's fixing.
Saturday: Swiss steak (in tomato sauce with lima beans, green beans, corn, and mashed potatoes)
Sunday: Glazed ham, Roasted potatoes and asparagus, grilled spicy pineapple rings, and some other veggie my mom is bringing.
 
Sun - Corned Beef, Mashed Potato, Roasted Balsamic Carrots, Strawberries
Mon - Cheese Canneloni, Green Salad, More Roasted Balsamic Carrots (Saturday potluck canceled, so I have 4lbs to use)
Tues - Chicken Soft Tacos, Red Grapes
Wed - Indian Butter Chicken (with any leftover greens or roasted carrots mixed in), Rice, Roasted Yellow Squash
Thurs - Cheeseburgers with Lettuce, Tomato, and Onion, Cucumber Salad, Blueberries
Fri - Veggie Fried Rice (if I have lots of leftover rice Wed) OR Cheese Pizza with Smoothies and leftover veg (salad, carrot, squash)
Sat - Afternoon Family Easter Egg Hunt and Date Night to a Play (gonna fit in a takeout dinner of the family's choice - probably use a Groupon to a quick casual Indo-Chinese place that expires mid-April)

Easter plans are still totally uncertain...not sure if we'll do our risotto tradition or our duck tradition or both or create a totally new one. We never go to Sunday Mass (always the Vigil) but have to this year b/c we have choir members, so that's messing with my thoughts:)...

What's Indian Butter Chicken?

It's literal - Patak's makes a Butter Chicken sauce that you can pour over some chopped chicken breast (seasoned with just s&p) and sauteed veggies and have instant Indian:)...it's one of my go-to quick meals that let's me throw in any veg I need to use up since the sauce is so versatile...Wednesdays are usually a busy day for me, so I plan a 20-minute meal usually on that day!

We used a different brand but LOVE butter chicken with naan, rice and peas. Quick DELICIOUS meal and we fight over the leftovers. :laughing:
 

Weekly recap:

This week's plan. Again in no specific order yet,

Veggie lasagne & caesar salad/ garlic bread- still in the freezer
Roast chicken and veggies -Bourban chicken & rice
Chicken pot pie - meatloaf leftovers
Italian sausage & risotto. Became a pasta stir-fry
Bacon & eggs /fried potatoes. Frozen pizza.
Chili.
. Might happen?

This plan has fallen off the rails......not one meal made as planned, but we have not eaten out or bought anything post grocery shop. I just changed up the recipes. LOL we are in a Winter Storm watch, freezing rain expected, ice pellets already falling. Hope this is the end of winter!
 

Thanks westcoastfldisneygirl. DH is doing okay so far but the funeral (Saturday) will be the true test.

Sunday - Easter dinner at my In Laws
Monday - Kielbasa and cabbage
Tuesday - Pizza night
Wednesday - Hello Fresh box - our first one - Jamie Oliver's Grilled Chicken and warm green bean salad
Thursday - Hello Fresh meal #2 Dijon pork chops with potato cake and Asparagus
Friday - Hello Fresh meal #3 Juicy Lucy burgers with Gem lettuce salad
Saturday ??
Sunday left overs
 
I switched a few meals around but still stuck to last week's menu plan!
Just went shopping for next week's meals (and had to pick up Easter candy:rolleyes1).

Sunday- ham, mashed potatoes and gravy, bean bean casserole, rolls, and chocolate icebox pie
Monday- taco casserole
Tuesday- chicken parmesan with lemon pepper broccoli
Wednesday- stroganoff meatballs and peas
Thursday- queso flameado enchiladas
Friday- cheesy ham & hashbrown bake
 
Things are weird this week with the holiday and dh being away this weekend but dd being home and her friends coming for meals. It will be a loose plan and I will adjust as we go.

Today- Made homemade pizza and salad.
Saturday- Inlaws and some of dd's friends joining us for supper. BBQ sausage, BBQ chicken, mix of roasted sweet and regular potatoes, green beans, salad
Sunday- We are having a big Easter brunch at a winery with my extended family. I imagine it will be something quick in the evening after being out all day.
Monday-Chili (both a chicken version and vegetarian version)
Tuesday- Bolognese sauce over pasta (spaghetti squash for me)
Wednesday- Pork fried rice?
Thursday- Breakfast for dinner with fruit smoothies
Friday- Lemon pepper sole, roasted carrots, green beans

Butter chicken sounds so good right now!!! What brand sauce do you use? I've thought about making it from scratch, but not sure how it would turn out and I'm sure time consuming.

Monday- DH will be at work before I get home- he will take a frozen dinner and I will prob have soup/sand etc
Tuesday- I'm thinking appies and veggies- DH and I love to do this when DD is away and we don't have to do a whole meal
Wednesday- Poached eggs on toast
Thursday- My sis and BIL are arriving from Alberta, my Mom is cooking
Friday- I may offer to have everyone at our place- I think I will do Chinese
Saturday- Easter dinner at my Dad's
Sunday- Easter dinner at the Outlaws

This Week's Plan: (DD away visiting her bio-mom still)


Monday- DH isn't working today/night- so he will do something...I'm thinking appies or stirfry after all those big meals (we had chicken stirfry)
Tuesday- DH working nights so he will take a dinner from ham leftovers, I'm going straight to hockey so will get something out (DH had ham leftovers, I had a Subway wrap my mom brought me to the hockey game)
Wednesday- DH working nights however is on pager so will prob make something simple- tbd
Thursday- hamburger helper with veg and mash potatoes
Friday- We may go watch the away game of our hockey team, if we do we will prob just grab food at the arena
Saturday- MIL has already invited us over as some other family is in town
Sunday- I'm thinking fish of some sort

Looks like I have some work to do finalizing this week.

Hey gang!
My plan so far is:
Tonight- leftover Olive Garden from lunch on Saturday (kiddo and I did the buy one take one, which was a great deal! We had leftovers from the lunch too!)
Tues- Pulled pork in the crock pot with roasted sweet potatoes and salad
Wed- Tacos
Thurs- Leftovers
Fri- Out for Mexican with family :)

Not the greatest week, but I suppose it's good we're eating the leftovers? :confused3

It's a house brand for the Loblaws company...President's Choice Butter Chicken Sauce. We usually get the Blue Menu variety which is a lower calorie/fat option. We love it!!

I love the blue menu PC one! Soo good!
The costco one is really good too!

They are so handy- some meat, any veg we have in the house, stirfry those up, dump in sauce, simmer for a few! Soo good on rice with nan :)

I've just looked back through the last few weeks worth of posts and enjoyed seeing what everyone is eating...I tend to get into a rut, making the same dozen meals over and over again out of habit, so it is awesome to see what everyone else is planning as it gives me so many good ideas for me to veganize.

That said, my husband & I are vegan, is it OK to share our planned dinners too? We're on a pretty tight budget due to my doctors not letting me work due to health issues (heart failure) & my husband being a college student (studying to be a registered dietitian) who can only work so many hours while he's in school, so we plan stuff out a lot to take advantage of sales & pantry items bought when on sale, produce from our garden, etc.


Here are our planned dinners for this week:

Monday: sweet & sour tofu with pineapple chunks (large portion for my husband, small for me along with some lower sodium cucumber, basil & avocado gazpacho--I love it when both pineapples & avocados are on sale)

Tuesday: bread & cabbage soup (homemade whole wheat bread slice on bottom of bowl, delicious tomato based cabbage soup using up last of last week's sale cabbage ladled on top)

Wednesday: vegan Welsh rarebit and the last of the cucumber, basil & avocado gazpacho leftovers

Thursday: Mexican night...black refried bean burritos & tortilla chips (husband) & zucchini slices (me) with homemade guacamole and mango salsa (yay, mango season=on sale mangos!)

Friday: sweet potato curry (sweet potato, canned coconut milk, garbanzo beans, onion, a little fresh ginger & garlic, also some delicious spices) & mashed potatoes

Saturday: pasta e fagioli (homemade tomato sauce from canned tomatoes, cannellini beans & shell pasta), homemade rolls

Sunday: vegan mac & cheese and steamed dill carrots

Leftovers from all meals usually serve as our lunches next day.

Totally post! We have a wide range of diets/budgets/etc that post here and I get inspired by all of them:)...
 
Menu for the week :)

Today-chicken fajitas, ground beef tacos, rice, Mexican corn
Tuesday-steak sandwiches,fries
Wednesday - gnocchi and chicken alfredo casserole
Thursday- sloppy joes, tater tots
Friday - BBQ chicken pizza, salad
Saturday - most likely eat at a local amusement park where we'll be spending the afternoon, we each have the meal plan attached to our season passes so I like to take advantage of it as much as possible :)
Sunday - chicken tortilla soup, paninis
