I am glad to see this thread is still going strong, i read it often but haven’t posted in a bit. I have been doing so good with eating at home. Now that i am in my 8:30-5 normal hours job my eating out has gone down dramatically. I have been doing pretty good. I meal plan for the week, shop Friday nights after work unless i am busy and do a ton of prep on Sundays.

This week I have planned

Saturday I made baked buffalo chicken wings with fries and salad

Sunday was pork roast with sweet potatoes and brussel sprouts’

Tonight I made teriyaki chicken stir fry with rice

Tomorrow will be slow cooker apple cider beef stew with biscuits

Wednesday will be breakfast for dinner

Thursday will be grilled cheese with tomato soup

Friday will be out for a friend’s birthday, he picked Buffalo Wild Wings, yummy

Sunday: Chicken salad sandwiches, roasted acorn squash, chips
Monday: Sausage, broccoli, potato casserole
Tuesday: Turkey meatballs, alfredo pasta, garlic bread
Wednesday: Italian beef, mac and cheese, cauliflower tots
Thursday: Leftovers
Friday: Frozen pizza

Last night: salmon with herbed butter and kale salad
Tonight: Flat iron steak with pomme frites. It was really good--Thomas Keller's recipe from his Bouchon cookbook--smothered in shallots and topped with compound butter. I only deep fry a few times a year, so it was kind of a special meal.

Will work out next week's plan tomorrow. We're planning on fasting, and I often fantasize about food on those days . . .

I am heading to TN next weekend to deal with more junk from my dad's passing so will be eating a lot of fast food between appointments. I may stop by a grocery when I get there though and grab some water, bananas, and snacks though. The place I am staying has a fridge and kitchen.

Here are the next 2 weeks though:

Today: Meatloaf with roasted potatoes and carrots
Monday: L/O
Tuesday: Out with my bestie
Wednesday: L/O
Thursday: Veggie stirfry with noodles (red cabbage, onion, bell pepper, carrots)
Friday: L/O

Saturday: TN
Sunday: TN
Monday: TN
Tuesday: TN
Wednesday: Frozen Meal
Thursday: Spicy Udon (if I have energy, otherwise a frozen meal or breakfast)
Friday: L/O (or a frozen meal or breakfast depending on Thursday)

Once I get back from TN I am really going to hit the ground running when it comes to dieting and eating at home. I have NOT been doing well with either of late (yay for depression) but I have to. I NEED to for my well being.

We are going to Phoenix next weekend, and will be eating out from Friday on. But for the first part of the week, here's our plan:

Monday: Cod with tomato salsa and Spanish seasoned jojos, salad
Tuesday: Chili con carne
Wednesday: Loaded baked potato soup
Thursday: Hummus greek pizza pitas (basically hummus, veggies, and olives)
Friday -- Tuesday--- eating out

Edited--didn't stick to the plan at all. Monday was pav bhaji, Tuesday fettucini with bolognese sauce, and today is carne adovada. Tomorrow will likely be leftovers or fast food.

How cool, @neatokimmo! I love that board. Is it hanging in your kitchen or a hallway? Talk about keeping you organized!
Oops sorry I just saw this. It is leaning on a wall now but will be on a kitchen wall soon. I have a half wall coming down from the ceiling (trilevel) where I can update it. It shouldn’t take the hubs more than six months to hang it lol

My menu is toast, I purchased a Hormel pork roast for 58 cents a pound, marked down from $1.99 pp. I know it will shrink down in the crockpot, but a six pound roast is going to last all week.

This thread is exactly what I need right now! We recently moved and kids are about to start winter sports, so I need to get my meal planning butt in gear before things get crazy.

**I'm always happy to provide recipes for anything, just send me a PM! I tend to keep to a keto diet but I try to choose meals that the family can have "regular" style and I can just adjust for my needs.

Monday:
Kielbasa "dirty" rice (cauliflower rice for me)

Tuesday:
Tacos and bell peppers (I'll either put my taco meat in a cheese shell, or have it as a taco salad)

Wednesday:
"quick" foods night, lots of activities going on.
Chicken nuggets, tater tots and sliced apples for the kids
Hubby is working and will eat at work
Probably tuna in a bell pepper half and some sliced cukes for me

Thursday:
Crockpot creamy ranch chicken over pasta (over spaghetti squash for me)

Friday:
Homemade pizza night! My from-scratch dough for the fam, I will do either a fathead dough or a flax skillet "crust".

Saturday:
Roasted chicken thighs, roasted veggies, rice (cauliflower rice for me)

Sunday: Dinner at the in-laws, I'm off duty!

Thursday: Green salad and grilled chicken (leftovers for lunch for me on Friday)

Friday: Meatloaf (leftovers for Saturday lunch)

Saturday: EMFH (Every Man For Himself, aka: scrounge in the fridge)

Sunday: Beef stew (leftovers for lunch today)

Monday: Dinner at parent's with aunt & uncle

Tuesday: Spaghetti (my favorite lunch leftover)

Weds: I'd like to grill hamburgers, but this stinking Daylight Saving makes it pitch black by 5:30...
