Ok, I need some help from my frugal friends!

While doing our freezer clean out I found about 5 packages of "tenderized pork loin". Today I have some set out to grill (just marinating them in some Italian dressing)...but I need some recipe ideas on how to use them (even unconventional ideas).

I didn't realize there are about 4 small cutlets per package so I have a ton to use and haven't found many recipes other than your basic fried tenderloin recipe.

My husband thought there was one per package so we have about 3 or 4 nights of this meat to use so I have to be quite innovative :lmao:

Anyone have any idea on how to use them? :confused3
 
So far for this week I have planned -
Tonight - marinated chicken tenders, roasted carrots,
Tuesday - Hamburgers, coleslaw, corn on the cob
Wednesday - Lasagna, garlic bread, side salad

Today was baked chicken, green beans and bananas.
 
Here's what is on the menu for us this week:

Homemade pizza with sausage, goat cheese, and caramelized onions
Crockpot chicken, veggie, and stuffing casserole
Shrimp and corn chowder
Hamburgers with roasted potatoes
 
I will post my menus later BUT I am so proud of our eat at home day yesterday I had to share :cool1:!!

We went to see Saving Mr. Banks yesterday and the theater was about 45 min away. The movie started at 1:00 so I knew we would be leaving around lunch time. Instead of buying junk at the theater I made us yummy hoagie sandwiches and bottled water to eat on the ride up. After the movie we were going to stop at Sonic but instead we decided to order pizza when we got home. When we got home my hubby said instead of pizza how about the twp packs of tortellini we bought while food shopping. So I made us all tortellini with cheese and butter! We avoided eating out 2X yesterday because of a well stocked fridge/pantry!! YAY ME!

If it's cutlets, you could probably use it like tenderloin medallions.

I like to just brown them in a little olive oil and then pour some all fruit spread thinned with a little water over them in the pan so that it makes a glaze.
My favorites are apricot or cherry, but you could use any flavor you have that you think would taste good with pork - apple, raspberry, etc.

It's really quick, so that's always a bonus.

We just grilled the ones we had last night and my kids snarfed them down like nobody's business! :cool1:

I haven't made a menu for the week yet. Last night was Indian Butter Chicken and rice.
I bought a giant pork roast at the grocery store on the weekend. I have no idea what to do with it, but the price was good, and I know I've had it and liked it so I will just need to figure out some recipes for it. That will likely be tomorrow night.
And then I will make a Beef Stew on Thursday. It is just freezing cold and the perfect weather to make crockpot beef stew.
 
Any suggestions for what to do with thin sliced pork chops? Bone in? Without any tomatoes? LoL

I am really trying to eat everything in the freezer because I will be moving at the end of March. I also really want to keep things simple because the next 2 months will be filled with looking for jobs, packing, and all of that insanity. Working on my meals for next week now (need a break from the job applications which are driving me insane).
 
we like to have stuffed porkchops - just add precooked stuffing in a pocket cut into the pork .. you could always slice it in to chunks or strips and have a stir fry.. and then again I am trying a new recipe for our boneless pork this week - Maple Apple Pork chops..

for thin sliced - I just put them an eggwash with bit of breadcrumb and parm cheese mix on them then bake .. my Hubs like BBQ underneath sometimes then the crumb topping baked

Monday: Chicken Stir Fry
Tuesday: BBQ Beef sandwhiches, fries, mac and cheese
Wednesday: Baked Chicken, green beans, leftover mac and cheese

Friday: Fettuchini Alfredo, salad, garlic bread

I would beat an egg with a little Dijon mustard, dredge in bread crumbs and then pan fry in olive oil....
