This week's menu:

Saturday - Steamed lobsters ($3.99/lb), beet greens, salad, rosemary bread
Sunday - Sweet italian sausages with onions and peppers on sub rolls, pasta salad, tossed salad, chips, pickles
Monday - Baked chicken with herbs, roasted red potatoes and carrots
Tuesday - Leftovers
Wednesday - Pork chops on the grill, applesauce, rice, green beans
Thursday - Salmon on the grill, pasta, summer squash, tossed salad
Friday - Make your own pizza, tossed salad, ice cream sundaes
 
Tonight: tuna melts with soup
Tuesday: summer stirfry w/ brown rice
Wednesday: bowtie lasagna
Thursday: roadtrip!
Friday: bbq chicken (if I have any energy when I get home)
Saturday: leftovers
Sunday: dinner at the folks house

I have a question for you ladies. Are most of you stay at home moms or working ladies? I work full time and only dream about having dinner ready at a reasonable hour but my sister says it's just as bad for her as a SAHM. Any advice for either situation?

Ever have one of those days where it's good news, then bad news, then good news, then bad news? Yea, that is how my day has been going. I know it is off topic, but I don't know where else to vent about it...

So, good news is my cousin is taking off the whole week between Christmas and New Years which is when I will be up there visiting! Usually she has to work at least some of it, but she got a promotion and thus was able to get priority on her request. I love my cousin but we don't get to spend anywhere enough time together since she lives 8 hours way. So I am super excited!

Then bad news... my aunt passed away last night in her sleep. I didn't know her that well as we didn't associate with that part of the family much. Still, I am worried about my mom and my grandmother, especially my grandmother since she has been having health problems lately. So while I am not having strong emotions about the death itself (hard to when you have no connection), I am still worried about stuff.

So, more good news is I got to spend a lot of time talking to my boyfriend tonight. It's a long distance relationship and the last week has been hard finding time due to his increased work schedule. He just got a promotion and has been working whatever hours he can get so last week he worked doubles and then picked up shifts this weekend, which never ended on time. He's doing it so he can afford plane tickets to come and see me, but it still sucks. But tonight he got off on time and we got to chat for 4.5 hours.

Then more bad news... my school is messing with my Financial Aid. I'm not officially in my second program yet, so my credit hours are higher then they "should" be. So my school is trying to take away some of my aid. My other application is in and I am just waiting for the official acceptance (the program head has already stated that I should get in no problem). Once I get that, my credit hours will be fine... but for now, they want to take away almost 4k.

Oh well, it's just been a stressful night and I just needed to get it out. Now back to your regularly scheduled meal planning thread! :thumbsup2

I'm working part time over the summer, and work full time during the school year. I think it's hard no matter whether you're working or not, and I think it's somewhat harder when your kids are little. I remember having to put my kids in the swing when they were babies, or parking them with a movie so I could make dinner. Lots easier now that my youngest is 14. One thing I do is try to make extra stuff over the weekends that can stretch or do some sort of double duty later (bread, huge batches of pasta sauce, freezing tons of potstickers, etc).

My menu plan didn't go due to buying different ingredients (on sale) and my friend returning from a fishing trip with lots of sockeye salmon. So, here's my second attempt at the next few days:

Today: Lunch --tuna/rice casserole
Dinner-- salmon, fried rice, and (this might be kind of gross to some, but I like it) salmon fish head stew. I had enough for a second meal tomorrow and I strained the rest of the broth and froze it as fish stock
Also made: 2 loaves of whole wheat bread (and fried a couple donuts for me ) and I took several sacs of fresh salmon roe and cleaned and cured them to make ikura (Japanese salmon caviar).


Tuesday: leftover salmon stew and ikura nigiri sushi

Wednesday: grilled cheese sandwiches and tomato soup

Thursday: chef's salad and crackers with cheese and caviar

I work 5 days a week and I commute 1 hour and 45 minutes each way, and we eat dinner every night.

I think most of it is planning, we prep as much as we can and make our menu, stick to it, and it gets easier with time.

Any sauces, or breads that need to be made are made on the weekends, and meats that can be pre cooked, think browning ground meats, roasting chicken for enchiladas, or creating a roast, making a pot of soup, anything that can be pre-made, do it.

I still believe that it gets easier with practice. So just try it and see where you make it to and keep going...

Glad you are getting time to spend with your cousin and her promotion, sorry to hear about your Aunt, and I do understand about the stress for your mom and grandmother, also glad to hear that you got some quality time with your boyfriend. Hopefully the Financial Aid will work itself out.
 
Hi everyone! I hope you are all having a wonderful summer! One more week and a day and I am done with summer school:cool1: I wanted to share some news too! My youngest DD(the little one in my signature), who I am always babbling about, is finally having her gall bladder surgery. We have been through hell and back this year and finally found a surgeon at our local Children's Hospital. He ran a test our Specialist hadn't even tried and found out her gall bladder isn't functioning at all. The poor thing has had stomach pain and nausea every day for almost a year. I hope to have this all resolved soon. It amazes me she can be so happy when she's in pain.

This week I am keeping it simple. We will most likely be in the hospital one night. I am going to make a huge batch of chicken dumpling soup (yes it will be 100 degrees this week) but I think she will be on a clear diet for a few days. I also plan on making a huge batch of jello.

Today I am making cold shrimp salad for dinner tonight. I'll post it in my blog later:)
 
My mouth is watering reading all these wonderful menus. My question is where are you all getting recipes? Or do you mostly know them in your head? I need help with some recipes for basic, easyish, healthy meals for 2. Is this the place to ask?

Most of mine I find on Pinterest, recipe websites, and my cookbooks/magazines. Honestly, I would just search on google and then look through the results. I love Skinnytaste.com, Eatingwell.com, Foodnetwork.com, and so many others.

My favorite recipes are from The Pioneer Woman. Her blog and cookbooks have so many photos and explain everything very clearly. I love getting cookbooks at the library too!

Exciting news here: I got a promotion at my job today :dance: I have been there for 3 months and got a promotion with better hours and better pay.

Had to make some changes already. What a shock, I know!
 
It's been a while since I've posted in here but since I've been making monthly menus the past couple of months I thought I'd come in looking for some meal ideas. I have a few condsiderations when making my menu, there is always at least one slow cooker meal, in the summer we go to the waterpark at least twice a week and I love coming home to a meal all ready :thumbsup2. Also I like to try one new recipe a week, Pinterest has been awesome in helping me find great new things to make. Recently I've been trying to double my recipe on casseroles and freezing them for future dinners, this will really help me out come September when I have 3 kids playing 3 different sports and will need quick and easy meals.


Just did our shopping for the next week and half


Tonight - Monterey chicken, mashed potatoes, corn and a salad

Thursday - Slow cooker beef and broccoli with rice (new recipe) and dumplings

Friday - Stuffed shells and eggplant parm (doubled up)

Saturday - * Hercules movie night * Keftedes aka Greek meatballs w/ tzatziki sauce, Kolokythokeftedes aka zucchini and feta balls and Spanakopita with Baklava for dessert!

Sunday - Slow cooker hawaiian chicken, rice and green beans

Monday - Burgers, hot dogs, potatoe salad and grilled corn on the cob

Tuesday - Chicken enchiladas, spanish rice and beans (new recipe)

Wednesday - Slow cooker Balsamic pulled pork (still need a side dish)

Thursday - Roast beef, smashed potatoes, carrots

Friday - Mini chicken pot pies, salad (double up)

Saturday - Homemade sloppy joes, tater tots, corn on th cob

I love the Balsamic pulled pork and we make it often. My favorite side dish with it is this Creamy Polenta http://www.simplyrecipes.com/recipes/creamy_polenta/ . I have to add a pretty good amount of salt to it, but they are really good! We usually have lima beans with that as well but have also had it with sweet potatoes and broccoli and it was also really good. :)
