Tonight was the Glazed Salmon with Broccoli Rice due to the chance of storms this evening. Hopefully, I will be able to grill both nights this weekend or I am in trouble!

Here is my menu for next week (days depend on weather):
Monday: Taco Salads

Tuesday: Soy Ginger Chicken and Rice

Wednesday: Broccoli and Cheese Stuffed Chicken and Mashed Potatoes

Thursday: Grilled Steak, Baked Potato, and Salad

Friday: Asian Salmon Steaks and Vegetable Fried Rice

Saturday: Key West Grilled Chicken, Corn on the Cob, and Sliced Tomatoes

Sunday: Chicken Paprikash, Egg Noodles, and Sugar Snap Peas
 
I am joining this thread. I still have to come up with a menu, but have to do my grocery shopping tomorrow.

Tonight was spaghetti with meat sauce and garlic bread.

We have been out of town, so time to eat at home and save some $$ for our next trip.
 
Saturday: Steak, baked potatoes, corn on the cob, french bread

Sunday: London broil w/ mushrooms, french fries, green beans, salad

Monday: Quesadillas

Tuesday: Out

Wednesday: BLTs, chips, pickles

Thursday: Ravioli, Garlic toast

Friday: Leftovers or something from the freezer


This is my plan, but I may have to switch a couple of things during the week. THe kids have some activities around the dinner hour, so I tried to make dinner easy.
 

Tonight is Cottage Pie. Ground beef with peas, carrots & corn topped with mashed potatoes & a sprinkle of grated cheese. YUM!!

This week is going to be crazy so we shall see what the menu brings.
 
Did my grocery shopping today. We spent most of our grocery budget stocking up on diapers & formula, so this week we are eating a lot out of our pantry & freezer.

Sat (today): breakfast for dinner. Eggs, turkey bacon for hubby & ds, pancakes.
Sun: Crockpot beans, rice, & sausage
Mon: Sloppy Joes and french fries
Tues: Homeade pizza
Wed: Chicken and asian veggie stir fry with steamed rice
Thurs: meat loaf, mashed potatoes, steamed veggies
Friday: skillet chicken pasta meal
 
I have been mia due to a Disney trip! :cool1: We had a blast and came home with NO money. So we are living cheaply.

Tonight was homemade pork dumplings and chicken and broccoli with rice. *poor man's chinese food I suppose. Dumplings are so cheap to make and my kids LOVE them. I had ground pork- just added ginger, soy, chives, soy for filling. mmmmm.

Tomorrow is going to be Roast Chicken, rice and broccoli maybe homemade rolls of some kind. I am hoping to rework the leftover chicken into Chicken Quesadillas later in the week. Also I am going to make stock out of the bones and use that for risotto.

Once a couple checks clear I'll be in a better food frame of mind. But I am amazing myself that I can make dinner out of nothing.

I am going to try to make my own pasta! Its just flour, water, egg and olive oil I think. And I have all those.
 
Tonight: alfredo chicken penne pasta with salad

Sunday: hot and sour soup* and either pot stickers* or green onion pancakes (haven't decided)

Monday: hamburgers, cold vegies, dip

Tuesday: spaghetti* and salad

Wednesday: chili*

Making extras to freeze of all the starred items. I've realized I did a great job of eating down our food, and now I need to fill the freezers a little (though not too much since it's fishing season.)

I need to refill some of my freezer too. Means next weekend will be an expensive one for groceries. After this week I will have no steaks, no salmon, no chicken breasts, no ground beef, no white fish, and 1 pack of chicken thighs. Yea, that just won't do!
 
Did 1/2 the shopping yesterday - will fill in more Tuesday...but for now...
Sat - Cheese ravioli, pears
Sun - Cheeseburgers, black beans and chorizo with fritos (leftover), plums
Mon - Pork BBQ sandwiches, cucumber salad, rainier cherries
Tues - Pizza, peaches, smoothies
 
Grocery day! Which means menu plans are set. Going to try some new things this time...fingers crossed!

Sun: Crockpot pineapple chicken and steamed rice**

Mon: Taco Salad

Tues: Grilled chicken kabobs, pasta salad

Wed: Salisberry steak, mashed potatoes

Thurs: Chicken and spinach sausage, corn on the cob, leftover pasta salad**

Fri: Hamburgers, Mac & cheese

Sat: Pulled pork, fries

Sun: Crockpot meatloaf, baked potatoes**

Mon: Sloppy joes, fruit

Tues: Sausage tortellini soup & salad

Wed: Crockpot pepperoncini shredded beef sandwiches, salad**

Thurs: leaving open in case something comes up during the next couple of weeks. Backup would be hot dogs with shells and cheese.

**New menu items or menu items prepared differently for us. Excited!
 
Today will be roast chicken, ,mushrooms, rice and broccoli with rolls of some kind that I'll make.

Right now I am making dough to make Ham and cheese pockets to freeze. DH has been taking lunch everyday and he has a microwave so I thought these would be a good quick grab and go item for him.

Tuesday - Sloppy Joes (homemade, with turkey), Corn, Potatoes
Wednesday - Veggie Omelets, Home Fries
Thursday - Out
Friday - Hawaiian Chicken, Rice, Broccoli, Pineapple
Saturday - Leftovers
Sunday - Mom's Night In at a friends house (so dad will choose and cook for our family while I'm gone! That probably means grilled cheese and fruit for them. :) )

Tuesday - Sour Cream Paprika Chicken, Salad Wedge and Creamed Potatoes
Wednesday - Smoke Beef Brisket, Baked Beans and Corn on the Cob
Thursday - Spinach and Cheese stuffed chicken breast, wrapped in Bacon, with a salad wedge.

We're cutting the food budget to save for our Oct trip. I have several meats in the freezer to use:

Mon - chicken cordon bleu bake

Tues - tuna salad

Wed - baked penne pasta

Thurs - ginger glazed chicken and rice

Fri - baked pork chops with veggies

Sat - fried rice with ham, shrimp, peas, eggs, mushrooms

Last night we had beef stew.

We have family coming in tomorrow and we are going to try to eat a lot of the meals at home.

The Plan is:

Tonight: Sandwiches with soup
Tuesday: Pizza night
Wednesday: Tacos, Spanish Rice, and fruit
Thursday: Spaghetti and turkey meatballs with garlic bread and salad
Friday: Pork BBQ with hash brown casserole, salad, and watermelon.

Tuesday - leftovers

Wednesday - meatloaf, mashed potatoes, mac and cheese

Friday - eat at game or sandwich with fruit

Saturday - Boy Scout picnic
