Chiles Rellenos Casserole

16 ounces whole green chile peppers -- rinsed and drained
1 cup cheddar cheese -- shredded
1 cup Monterey jack cheese -- shredded
4 eggs -- beaten
12 ounces evaporated milk
2 tablespoons flour
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon dried cilantro -- crushed
1/4 teaspoon ground black pepper
Grease a 2 quart rectangular baking dish.
To remove any excess moisture, pat drained chile peppers with paper towels. Halve peppers lengthwise and remove seeds. Place 1/2 of the peppers in the bottom of the dish. Sprinkle with half of the cheeses. Place remaining peppers in the dish. Sprinkle with remaining cheeses. Combine eggs, milk, flour, salt, garlic, cumin, cilantro and black pepper. Beat with a wire whisk or rotary beater until smooth. Pour over peppers and cheese.
Bake, uncovered, 350 degrees for 30-35 minutes, or until set in center.
Before serving, sprinkle casserole with crushed red pepper or green onions.

Cottage Pie

1 cup brown gravy

Heat 1/4 cup butter in a 9' skillet. Add onion and cook until lightly browned, stirring. Add beef, salt, pepper and savory and continue cooking 5 minutes longer.
Stir in gravy and heat until bubbling. Spoon into a buttered 8 cup flat casserole dish. Top meat mixture with mashed potatoes. Dot with pieces of butter.
Bake at 400 degrees for 30 minutes, or until potatoes are lightly browned.

Enchilada Casserole

1 clove garlic -- minced
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
9 ounces enchilada sauce
1 1/2 cups shredded cheddar cheese
1/2 cup onion -- chopped
12 soft corn tortillas
Brown meat and garlic. Stir in soups and enchilada sauce. Simmer.
Combine cheese and onion.
Quarter tortillas.
Line a greased 13x9" baking dish with half of the tortillas. Top with half beef mixture, then half cheese. Repeat.
Bake at 350 degrees for 25-30 minutes. Let sit for 10 minutes before cutting.

Lattice-Top Chicken

1 can condensed cream of potato soup
1 cup milk
1/2 teaspoon seasoned salt
2 cups cubed cooked chicken
16 ounces frozen broccoli, carrots and cauliflower
1 cup shredded cheddar cheese
1 can french fried onions
1 package refrigerated crescent rolls
Combine soup, milk, salt, chicken, vegetables, 1/2 cup cheese and 1/2 can onions.
Place in 8x12" baking dish.
Bake, covered, at 375 degrees for 20 minutes.
Unwrap crescent rolls. Separate into 2 rectangles. Press together perforated cuts. Cut each rectangle lengthwise into 3 strips.
Place strips on casserole to form lattice top.
Bake, uncovered, 15 minutes longer.
Top lattice with remaining cheese and onions. Bake uncovered, 3-5 minutes.

1/2 cup uncooked rice
1 egg -- slightly beaten
2 teaspoons onion -- grated
1/2 cup tomato juice
1 teaspoon salt
2 tablespoons butter or margarine
1/4 cup minced onion
1/4 cup celery -- coarsely chopped
1/4 cup green pepper -- coarsely chopped
10 1/2 ounces tomato soup
3/4 cup water
2 tablespoons lemon juice
2 tablespoons brown sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1 teaspoon Worcestershire sauce
Lightly grease a 2 1/2 quart casserole dish with tight cover.
Combine and mix lightly the first 6 ingredients. Shape into 1 1/2" balls and put into casserole.
Heat butter or margarine in skillet. Add onions, celery and green pepper. Cook (stirring frequently) until celery is limp.
Remove from heat and add soup, water and seasonings (stirring constantly). Simmer 5 minutes.
Pour tomato sauce mixture over meat balls, cover and bake at 350 degrees for 1 1/2 hours.

Turkey Chow Mein Casserole

1/2 cup Bisquick® baking mix
2 cups cooked turkey -- cut up
1/3 cup blanched almonds

2 ounces jar sliced pimientos -- drained
1 cup chow mein noodles
Heat oven to 375 degrees.
Gradually stir broth into baking mix in ungreased 1 1/2 quart casserole. (Mixture will be lumpy.)
Stir in remaining ingredients except chow mein noodles.
Bake uncovered until thick and bubbly, about 40 minutes.
Sprinkle with chow mein noodles. Bake uncovered 5 minutes longer. Let stand uncovered 5 minutes before serving.

15 Minute Chicken and Rice Dinner

Prepare rice mix according to package directions.
Season chicken with salt and pepper. In skillet, brown slowly in butter.
Spoon rice into 1 1/2 quart casserole. Top with chicken, skin side up.
Add soup to skillet. Slowly add sauterne, stirring till smooth.
Add remaining ingredients. Bring to a boil. Pour over chicken.
Cover; bake at 350 degrees for 25 minutes. Uncover; bake 15-20 minutes or until tender.

Taco Bell Grilled Chicken Burrito

Marinade
1/2 cup water
1 teaspoon soy sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon onion powder
1/4 teaspoon liquid smoke flavoring
1/4 teaspoon black pepper
1/4 teaspoon chili powder
2 boneless chicken breasts
1 cup cooked rice
1/2 cup enchilada sauce
1/2 teaspoon salt
4 12" flour tortillas
1/3 cup shredded Cheddar cheese
1/3 cup shredded Monterey jack cheese
green onion -- sliced
In a small bowl combine marinade ingredients. Pour the mixture over the chicken breasts and marinade overnight.
Cook the chicken on your barbecue or indoor grill over med-high heat for 5-6 minutes per side, or until done. Slice the chicken into bite-size chunks.
Add the enchilada sauce to the rice. Put on the rice over low heat, uncovered, and cook until hot.
Heat the tortillas in a steamer, or wrap them in moist towels and heat on high for 25-30 seconds in the microwave.
Build the burrito by spreading 1/4 of the chicken down the middle of one of the tortillas. Leave room at the end for folding.
Spread 1/4 of the rice over the chicken.
Sprinkle a heaping tablespoon of each of the cheeses over the rice. Sprinkle sliced green onions to taste.
Fold up. You may want to heat up each burrito in the microwave for 20-30 seconds to help the cheese melt.
NOTES : I also spoon a little more enchilada sauce over chicken mixture.

Classic Family Meatloaf

1/2 cup dry bread crumbs
1/4 cup minced onion

In bowl, thoroughly mix 1/2 cup soup, beef, bread crumbs, onion, 3 teaspoons Worcestershire, egg and pepper.
In a 12x8" baking pan, firmly shape into 8x4" loaf.
Bake 350 degrees for 1 hour.
Mix together remaining soup, remaining Worcestershire sauce and water. Spread over meatloaf.
Bake an additional 15 minutes.

Meatballs Hawaiian

1/2 teaspoon salt
1/4 teaspoon ground ginger
1 egg
1 teaspoon water
1/4 cup flour
3 tablespoons vegetable oil
14 ounces pineapple chunks in juice
1/4 cup firmly packed brown sugar
2 tablespoons cornstarch
1/4 cup cider vinegar
1 tablespoon soy sauce
2 green peppers -- seeded, cut in strip
Hot cooked rice
Mix ground beef lightly with salt and ginger. Shape into 16 balls.
Beat egg slightly with water. Dip balls in egg mixture, then in flour to coat well.
Brown in oil in a large frying pan. Remove with slotted spoon and set aside.
Drain juice from pineapple into a 1 cup measure, add water to make 1 cup. Stir into drippings in pan.
Mix brown sugar with cornstarch, vinegar and soy sauce. Stir into pineapple-juice mixture.
Cook, stirring constantly, until sauce thickens and boils 3 minutes.
Arrange meatballs, pineapple chunks and pepper strips in separate piles in pan. Stir each gently to coat with sauce, cover.
Simmer 10 minutes or until meat balls are cooked through. Serve over rice.

Quick and Easy Salisbury Steak

1/2 cup bread crumbs
1 medium egg

1/4 cup catsup
1/4 cup water
1 teaspoon Worcestershire sauce
1/2 teaspoon mustard
In bowl combine 1/3 cup soup with beef, crumbs, egg, salt and pepper.
Form into 6 patties.
Brown patties. Pour off fat.
Remove patties.
Gradually blend remaining soup into flour until smooth. Add to skillet, stirring to loosen browned bits.
Add browned patties. Stir occasionally.
