Easy homemade casseroles?

I made turkey divan after Thanksgiving a couple of years ago, and now my family loves it when I make it..although I use chicken more than turkey.

I cut up and brown chicken, throw it in the bottom of a 13x9 pan.
Microwave a package of frozen broccoli and spread over top of the chicken
Sprinkle shredded cheddar on top
Mix a can or 2 of cream of something soup with some milk and pour over this
Bake for 15 mins at 450
Serve over rice
I also sprinkle breadcrumbs on top

You could use the chicken that's already cooked, or save it from an oven stuffer roaster, or use leftover turkey after Thanksgiving.

I'm not a measure out kinda cook in the kitchen, but if you looked online for this recipe, I'm sure you'll find one.

This was a Home-Ec recipe from high school 25 years ago, but I still make it:

Country Stew
375 degree oven 25-30 minutes

1 lb ground beef or turkey
1 16 oz can mixed vegetables
1 8 oz. can tomato sauce
1/3 cup water (best to use the water from the veggie can)
1 envelope sloppy joe seasoning mix
1 can flaky biscuits (like Hungry Jack)

Brown meat, drain.
Combine everything except biscuits and heat it until warm on top of the stove
Top with biscuits (I usually separate each biscuit into 2 slices and then cover the top of the mixture that way. Better coverage and less bake time. It's easy to do because the flaky biscuits are in layers anyway.)
Bake for about 20 minutes or until biscuits are done.
 
My lasagna is super simple. I brown one pound of hamburger and mix it with a jar of spaghetti sauce. I put a layer of no boil noodles at the bottom, then some of the meat/sauce, some cottage cheese and mozzarella. Then repeat. I can usually only repeat once before I'm at the top of the pan.

I make an easy chili too- brown one pound hamburger, add two cans of chili beans and one large can of crushed tomatoes.

Today I made beef stew- tear up two minute steaks in small pieces and brown. Dice up a couple of potatoes and several baby carrots and boil them till tender. Add two cans Campbells condensed vegetable beef soup. Add the potatoes & carrots and the water you boiled in them. All done!

Favorite casserole- soak two cups dry pasta in two cups milk overnight. Add two cups chunked cheddar cheese and two cans cream of chicken and two cups chicken. Bake at 350 for an hour. Actually, I don't put quite all the soup in or it stays a little too runny.

Another quick meal- bake a tube of biscuits. On the stovetop, make a white sauce of about 2 TB butter, 2 TB flour and a cup & a half to two cups milk. Simmer and thicken and add torn up deli meat (I use Buddig turkey which is really thin) or chunks of chicken. Tear up a couple biscuits on your plate and top with the sauce.
 
I do a ziti bake that goes over well with my family. Boil ziti noodles for 7-8 minutes until al dente. Brown 1 lb of ground beef until no longer pink and drain. After draining, add onion and garlic powder to taste. Mix ground beef with noodles, one jar of spaghetti sauce, 1 small container of cottage cheese, 1 cup of shredded mozzarella cheese and 1/4 cup parmesean cheese. Dump into casserole dish and top with 1 cup of mozzarella cheese. Cover and bake at 350 for 30-40 minutes. I serve with garlic bread and a salad.

I also do variations of chicken and dressing casserole. One I love, one my DH loves. And their both incredibly easy. The one my DH loves: take 1 chicken breast for each family member and put on bottom of casserole dish. Take 1 box of Stovetop stuffing and moisten with warm water and top the chicken. Pour one can of cream of mushroom (or chicken) soup and mix with 1/2 cup of milk and dump over chicken and dressing. Cover and bake 30-40 minutes at 350. I serve this with a green veggie.

The chicken and dressing casserole I love: Take one chicken breast per family member and put on bottom of casserole dish. Take 1 package of bread dressing (like you'd use to stuff your turkey with) and mix with 1 can of warm chicken broth plus the dressing seasonings of your choice (I use salt, pepper, onion powder, dried minced onions). Top chicken. Pour additional can of chicken broth onto dressing and top with 3 tablespoons of butter cut into thin pats and dotted over the top of the casserole. Cover and bake at 30-40 minutes. Once again, I serve with a green veggie.

I know how it feels to work the long days and still want to put some healthy but quick meals on the table for my family. I use my crockpot about one a week as well for things like chili's, soups, roast beef, etc. Having dinner almost completely ready when we walk through the door is amazing to me!
 
I am always looking for casserole ideas. My husband doesn't like any "cream of" soups. You wouldn't believe how many casseroles use that as a base.

This is one that like lasagna, freezes and reheats well and is super easy to make. It's Spaghetti Pie. Ignore the "Saregento" brand all over the recipe.. I use whatever cheese we have and it's great! We also brown ground beef and mix with the sauce.

I make a white sauce to use instead of the canned cream soups. It is easy and I like that I can make it thick or thin as I like.

I'm not a big casserole fan, but this sounds pretty good to me. Thanks for the idea!
