Bought a few cans of Black Beans and now dont know what to do with them. Anyone have any tasty, budget recipes:confused3:confused3
 
I just put one on my blog the other day ~ a little spicy, cheap to make with no weird ingredients, great with Mexican or Tex-Mex. I leave out the cilantro because I hate it ~ don't miss it all all but if you like it, add it :)

Easy Black Beans
 
This is how I make black bean soup.
I cook in a crock pot/slow cooker
Chop 1 onion and few cloves of garlic (garlic powder works too) 1 can of tomatoes, 1 box of chicken stock (get from Dollar store) drain and rinse black bean in colander and add to cooker. I either cook over night or all day. just before we eat I grind them in blender and mix it with the liquid in crock pot. I like to add cheese or sour cream when eaten.

This might sound strange but it is one of my favorite salads, the flavors just balance eachother out. Serves 4, iceberg lettuce really cold, heat up can of black beans, cut up some purple onions if you have them otherwise omit. Place iceberg on plates as a wedges, spoon over warmed black beans, garnish with purple onions, canned salsa and some lo-fat ranch dressing. Can add some hot sauce, or jalepenos to add some heat.

Easiest ever - heat up the can of black beans with some minced onion and a sprinkle of garlic powder. Add oregano & cumin to taste. Mash up some of the beans to thicken the juices. Serve over hot cooked rice.
 
I use them in my veggies quesadillas.

Just do a quick stir fry of diced peppers (I like red and yellow) and onions. Take off the heat and toss in some shredded cheese and beans (straight from the can or warmed in the microwave if they've been in the fridge). In another pan greased lightly with Pam, heat a large flour tortilla until lightly browned and bubbling. Flip the tortilla to cook the other side. When nearly done, fill one side of the tortilla with the veggie/bean/cheese mixture, toss in a sprinkling of cilantro and picco de gallo, and fold tortilla in half. Serve with sour cream, jalepenos, and more pico de gallo!
 
Yes! SUPER yummy bean dip that's SO easy!

Drain and rinse one can of black beans and put them into a food processor or blender

Add:
3/4 cup salsa (I use mild but whatever you like)
2 tbsp sour cream
2 cloves of garlic, chopped
(optional) cilantro to taste (I don't like cilantro and the dip tastes great without it but hubby also likes it with cilantro)

Pulse/blend until completely mixed.

It's super yummy and very easy!

ETA: I also usually throw in some black beans when I make chicken enchiladas. Just cook the chicken, add some black beans, corn, cheese, a small amount of sour cream, a bit of enchi sauce and mix well to make a really yummy enchi filling.
 
I make a black bean chili:

3 cans of black beans, rinsed and drained.
1 pound of ground meat - either turkey or beef
1 tsp. of chili powder
1 jar of salsa 16 oz.
1 12 oz can of either diced tomatoes, chopped tomatoes, or the Rotele tomatoes with green chilis

brown ground meat, add the other ingredients. Simmer for 20 minutes. You can easily adjust the spiciness by reducing or adding more chili powder.
Then I serve. If I have taco cheese or cheddar cheese, I shred it and put it on top of each serving.
I usually serve with a side salad and corn bread.
Yum.
 
Black Bean Salsa

1 can black beans (drained & washed)
1 can corn (drained)
1 to 2 fresh tomatoes, diced
1/2 diced onion (I use red)
Juice of 1 lime
1/2 to 1 tsp. cumin (or less, depending on how much spiciness you like)

Serve with tortilla chips.
 
mix 1 can black beans with 1 jar salsa of choice

Put as much as you like over corn chips with grated cheese on top, microwave about 1 minute. Garnish as you like (lettuce, tomato, olives, sour cream etc)
 
I add them to my taco meat. Tastes great and stretches out the taco meat.

Here is one that I love, but I can't really give exact measurements. Just add the amount you think you would like.

Black beans
Tomato chopped up
Mango diced
Jalapeno pepper (I like fresh, but jarred works too)
Garlic
Cilantro
lime juice

Toss it all together, serve room temperature or chilled. An optional ingredient to add is corn.


I also like rice and beans. Add adobo seasoning to the beans, a can of chopped tomatoes and cook. Serve over rice.
 
Cook chicken breasts, shred, and stir in black beans with some taco sauce. Spoon onto flour tortillas, and top with shredded cheese. Bake in oven at 400, for about 5-10 minutes.
 
This is delicious!

Corn Salsa​
1 can black beans rinsed and drained
1 can Niblets corn drained
1 medium green pepper diced
1 medium tomato diced
1 medium onion diced
1 bottle Zesty Italian salad dressing

Combine all ingredients in medium to large bowl. Pour Zesty Italian dressing (it doesn't take a whole bottle)

Chill and serve with nacho chips. Scoops work really well. Double for a crowd.

Add them to your taco meat after you cook it. It enhances the flavor of the tacoes and adds protein! Yum!
 
I just heat them and eat them. :) I do add stuff tho so here's what I do. :)

1 can drained black beans
1 can mostly drained yellow corn (I use no salt added)
cumin, white pepper, chili powder
I just dump both cans in a pan, add the seasonings to taste and heat thru, we eat this with tacos and yes, it makes the meat stretch. :) My girls LOVE black beans & corn, if I make enchiladas they want the mixture also. Sometimes I add other mex style seasonings but not often. :)
