Easy baked chicken recipes

Anyone have any to share? Referring to a recipe with chicken breasts or thighs, etc...not an entire bird.

I cook a lot of thigh's and legs. I put them in a dutch oven and put some olive oil and salt and pepper on top. Cook on 350 for 2 hours, they come out moist and crisp.
 

Chicken parts in dish. Pour on a bottle of teriyaki marinade. Bake. It's a little tastier if you let it sit in the marinade overnight and then bake.

This sounds great! Would it work with chicken breasts as well?
 
Mix a 5 ounce container of plain Greek yogurt with 1/2 cup shredded Parmesan cheese. I use boneless skinless breasts and place them in a greased pan. Spread the mixture on top and bake at 375 for 45 minutes. Tasty.
 
Line 9x13" pan with foil

Place 8-10 chicken breast halves, skinned and boned, in pan. (Frozen pieces don't need to be defrosted ahead of time.)

Optional: top each buzzard breast with a thin slice of ham.

Top with 1/2 lb Swiss cheese or Monterey Jack, grated or sliced

Top with 2c or more dry Stove Top Stuffing Mix

Mix together and pour over meat/stuffing:
2 cans cream of mushroom soup
1 c sour cream

Bake at 350F for one hour, or 90 min if you start with frozen meat. To test for doneness, pierce center of a buzzard breast with fork. Juices must run clear. If the buzzard squawks, you have a problem.
 
I started buying boneless, skinless thighs and using powdered ranch dressing mix to coat them. I buy the organic brand chicken just because they're a bit neater than other brands. Just make sure you pat the chicken dry before you coat them in the dressing mix otherwise it clumps up.
I also have done a can of cranberry sauce mixed with a little orange juice or french dressing.
 
Just an FYI---the Reynolds Non-Stick Aluminum Foil is awesome and makes any cooking clean up a breeze :lmao:. I love that stuff, really.

Another recipe our kids liked was chicken breasts coated in ranch dressing and rolled in crushed up croutons and baked.

We use Italian dressing as a marinade quite a bit too--it's especially good when you grill chicken but it works for baking too.
 
Mix Miracle Whip, a little Italian seasoning and some parmesan cheese. Spread on skinless chicken. Bake at 350º. Yummy.

Hawaiian Chicken:
1 c soy sauce
1 1/2 c sugar
1/2 c vinegar
4 tsp cornstarch
dash garlic powder
1 1/2 tsp ginger
1 can chunk pineapple with juice
Bring to a boil, simmer til it thickens. Place chicken in 13 X 9 pan. Pour sauce over chicken. Bake at 350º 1 hour. I serve over rice.

My absolutely most requested recipe. My brother and his GF, DS and I get together every Sunday night with DB's GF and I taking turns cooking. Invariably, I wind up making this about once a month for all four of us and sometimes DS even requests this at home in between. I've gotten to the point where I just eyeball the ingredients so the below info is approximate but I think pretty close:

4 chicken breasts
3 tbsp. butter
1 tbsp. minced garlic (we like garlic so I use a LOT more)
3/4 cup bread crumbs
1/4 cup parmesan
1 cup shredded cheese (I use Kraft's 6-cheese blend)
bacon bits to taste (optional)

preheat oven to 350
line 9x13 pan with foil
Saute minced garlic in melted butter until golden brown
mix bread crumbs, parmesan cheese, 1/3 or so of the shredded cheese, and bacon bits
coat the pan with about 1/2 of the bread crumb mixture
dredge the chicken in the garlic butter and place it in the pan
coat the chicken with the rest of the bread crumb mixture (I find this easier than trying to coat the chicken in a bowl of bread crumbs)
pour any remaining melted butter over the chicken

bake at 350 for 30-40 minutes
when the chicken is done, turn the oven off, smother the chicken with the rest of the shredded cheese and some more bacon bits and pop it back in the oven for a few minutes until the cheese is nice and gooey.
