I would suggest you book any excursions a head that you really want to do. This is especially true for those offered at different times. This way you get to do what you want at the time that is best for you. You would also have one less thing to do after boarding.
Well, the Atlantis submarine in St. Thomas was completely sold out the first day it was available, 60 days before our cruise. I understand now that Disney will take excurision reservations 90 days in advance if your fare if paid in full. Not sure whether that will improve your odds of booking this.
