Easter week--Quick Service Worries

I'm planning a trip for my sister and I and our kids (ages 9, 7, 4, and 1) for a week starting the day before Easter. It'll be the second trip for the kids and my ninth, but we've never ever been when it's busy. We usually go in Oct/Nov or Jan, so this is going to be seriously different.

We're staying in a cabin to FW and will be making breakfast in our room, and maybe supper too, so it's mostly lunch I'm worried about. I haven't made any ADRs. Other than for CRT. It's freaking me out a little, but on the other hand, I'm looking forward to having a little more freedom about where and when to eat.

My question, though, is will we be able to get in to eat non-TS places when it's so busy? Are there better times to eat where we won't have to stand in line forever? Is it a better idea to try to get ADRs for TS restaurants?

We have gone Easter week, before and after in the past and never had a real problem with counter service. One thing they do tend to do then is only allow people with food to sit down, which helps make sure you will have a seat. There are lines, but they seem to move ok.
