Easter or Maris Gras

Help me decide or trip for '19.... I'm an over thinker and over planner, seriously cannot decide.
2 adults, 4 kids considering Feb 28 (TH before Mardi Gras) - Mar 6th or Easter Apr 14-20.
I know Mardi Gras crowds can be rough but was hoping the few days before would be lighter, however I'd have to take the kids out of school a couple days and park hrs are shorter.
I also know Easter is crazy but I'm a really good planner, kids wouldn't have to take any days, and park hrs are longer.
Also, resort choices are still under consideration: 2 rms at Pop, a Cabin, or 2 rms at Caribbean. We've done AOA and offsite in the past.
What would you do?

Won't recommend for you, but will share that we stayed at WDW over Easter weekend (Thursday - Monday) last year. It was a mid-April Easter. I was prepared for crazy crowds but never saw any. It was one of the nicest weekends we've ever spent there, in fact. The weather was perfect. The Easter-egg themed scavenger hunt in World Showcase was nice.

mid-April sounds like it would be beautiful.
 
with the opening of Toys Story you can bet Easter this year will be crowded. I would go in Feb. Temps are also cooler in Feb where as April can be very hot and humid. We love going in Feb. less crowds and cooler temps. Room rates will be cheaper than Easter rates. Cabins are great and has a full kitchen. Sleep 6. Have you tried the family suites at the Music?

Thanks! All good points, definitely leaning towards February. We considered The Cabins but my husband thinks it’s too inconvenient for us to be on such a spread out resort. Plus we would never use the kitchen. I should look into the Music suites, had not considered them.
 
I did the week of Mardi Gras this year.

It wasn't bad at all. It was plenty busy, but not as bad as other times I've gone in August.

I'd probably stick to February.

I like the idea of kitchens, but unless I can microwave it, I'm not doing any cooking. I do that when I'm home so I can not cook at Disney. I might have my parents stop to get some microwavable breakfast foods (Hot Pockets or cheap breakfast burritos) since they're driving and I'm flying to meet them... But that's as much work as I'm doing. That or PB&J at most. Enjoy the vacation.
 
We went over Easter 3 years ago and would never go again. It was extremely hot and MK was so crowded. It truly was a time that I said I would never go again during Easter. I would go over Mardi Gras.
