I think at the disembarkment "talk" they tell you to be out of your room by 8:00 (by the way, no need to go to this talk, it is played all day/night on the cabin tv's). We left our room around 8:15, had breakfast at Topsiders and strolled off the ship around 8:45.

they want you out of the room so they can turn the room over for the next cruise that starts that same day. I'm not sure how strict they are on this, but will probably come knocking on your door if you are not out by the appointed time

As NYDisneyMom says, you don't need to eat in your appointed restaurant on the last morning, you can eat at Topsiders. You do need to be out of your room pretty early. There will be lots of activity in the hallway that morning, so it's not like you can sleep in, or even relax. When you have early seating, you're scheduled for breakfast at 6:30, so Topsider's is a nice alternative. Everyone has to be off the ship by 9:00am, so there's some element of being rushed, but I don't feel like the crew is rushing me directly. They're very busy beginning to turn the ship around, and that sense of urgency kind of rubs off on you, but I wouldn't say they rush you.

We usually eat at the restaurant, so as to be able to say goodbye and thanks to our servers. Since you pack the night before (and leave your bags out in the hallway to be collected), there's not much to do in the morning but take a quick shower and pack up your carry-on. It doesn't take long to be ready to vacate your room.

sure you can. DCL would like everyone off as early as possible to get the cabins and ship ready for the next cruise. Like I said, we were at Topsiders around 8:15. It's a buffet breakfast at Topsiders but on the last day it is really just cereals, danish, donuts, coffee, fruit, etc. If you want a 'hot' breakfast then you have to be at your restaurant at the assigned time. :)
